中國大陸帶過去的,我們小時候常吃的早點--大餅,有豆沙的蔥花的咸味的,也可夾油條。後來沒有了,因為烤大餅時要用手伸進去而爐火很熱,一般人做不長,後來改用煤氣烤就不香脆了,也沒人買,再下去就沒了這個行業了。
我也覺得中國很多老闆們都為了貪方便,年輕人懶了,台灣是很多還是用這種炭火爐,台灣的老闆更多講品質,有沒有用這爐烤,口感真的差很多,有機會來台灣吃,台灣還有很多店還是維持用這種爐烤
胡椒餅祖先就是福清光餅這類阿
只是以前台灣只有這類餅(蔥餅,蔥肉餅,酥餅)
後來約1980年代才出現胡椒餅
以前皮較厚較好吃,現在皮薄肉多少了以前的口感,反而較少去買來吃,家人都喜歡以前老板的口感。以前那老板很有個性~亂停車影响交通,不賣!現在是第二代接手經營。

3-40年前第一代做的吧 超好吃 好像是全台胡椒餅始祖、不然本來以前台灣只有福州餅和蔥餅。現在是第二代嗎?第三代吧?

@@kumabear9640 四十年前安東市場一帶就有胡椒餅, 薄皮燒餅了,還不只一家! 我從小吃到大。其實福州人無所不在,過去台本北各區都有好吃的燒餅,只是店家熬出頭後往往不願意下一代再做,都要子孫讀書出人頭地。

萬華的蟹殼黃我認為口感勝過這裡的小酥餅 這裡的小酥餅 偏實心扎實的 雖然有層次感 但裡面的蔥 豬油香不夠明確 萬華的蟹殼黃 裡面是空心有層次 蔥香豬油香破表 不過老張的胡椒餅真的是相當好吃 不論如何 南港老張都是老字號的人氣王
