Pressure canning corn with a dial guage:
Raw Pack
1 inch head space
Vent for 10 minutes
Add weight and allow pressure to rise to 10psi (check requirements for your altitude)
Reduce heat and keep at pressure for 55 minutes for pints 85 minutes for quarts
Remove from heat and allow the pressure to come down to zero and wait for the indicator to drop
Wait 10 more minutes and then slowly remove the lid
Lift cans out with a jar lifter (don't tilt them) and allow them to cool on a towel for 12 to 24 hours
