    Yes, this method is quite complicated. However, it does have a use. I've made banana custard in a more traditional way, and while it was smooth, creamy, rich, and delicious, it also turned. The beautiful yellow color is difficult to preserve. I assume the banana water does a good job of this.

    Why not just do it the oldschool way without the sousvide? Put bananas wrapped in foil in the oven for 15min at 360deg. remove bananas skins and place into robot coupe, add salt, sugar, and blend until really smooth. place 2 egg yolks on double boiler, with some water. Once egg yolks look pale add your banana mixture and cook until it reaches 145deg. Remove, and place onto a bowl over an ice bath, cool until it looks like custard. (For a creamier texture and flavor. You can alternatively boil 1 cup of milk and slowly add it to the egg yolks to temper them, and then place that on the double boiler until 145deg. Thats called a creme anglaise, n then add your bananas to that.) Just sayin :P

    They didn't centrifuge very well, but they did make their own gelatin.

    why do you add egg yolk ? and ¿why do you cook the egg yolk? ¿ it is the same if we add the raw egg wolk ?

      Yolk is cooked for salmonella, 65 degrees kills salmonella, and is added probably to blend liquid or for texture, maybe am wrong
