    Justin if you would tell Rebecca that if she uses a cake pan underneath her tomato jars when she is putting the tomatoes in the jar it will catch the spillage from the ladle. And it keeps the kitchen clean. That is how my Grandma did it, and I still use it to this day. Just sending some love to y'all way from the state of West Virginia.❤❤❤❤❤❤

    Also a steam canner is a game changer for water bath canning! Just got one recently - only takes like three inches of water and goes right on top of my glass top stove no problem! Not so much steam making the kitchen hot! You can fit the same amount of jars in it and processes for the same time plus five min off the burner! So easy and FDA approved😊 No more lugging that heavy pot of water across the kitchen!!!

    Tomato juice use as vegetable stock for tomato style Spanish rice. Rebecca’s should buddy up with Lily and Gideon on the garden harvest and preservation tasks. That way she’s not left alone doing a big job and the younger ones learn a valuable skill. ❤

    Canning anything in your tiny space is a major victory. When you're in your forever home, save and dehydrate and then power the tomato skins. It thickens sauces and puts a little bit of the sweetness back. It's a little bit of magic.

    I freeze my tomatoes whole after washing. When thawed the peels fall right off and I can make my sauces. If I had a freeze dryer I could then freeze dry the tomatoes and turn into paste or powder to add in soups or smoothies. Not shelf stable yet pretty close.

      I like the roasting on pan method that she used, but I roast longer until the juice comes out. Then I drain that juice out into a Jat. The remaining sauce is ready to freeze. But that is a smaller batch operation. If she wants to make 100 jars of sauce in a month or 6 weeks of harvest, that's 16 batches like what she just made. She'd have to do that every 2 or 3 days.

    I dehydrate the tomato skins and grind it into a powder. I use it as tomato paste and/or to thicken a sauce ... equal parts tomato powder to water.

    Slice up Tomatoes and mozzarella, put on a big plate, rip up some basil, Drizzle with a little olive oil. Add salt and pepper to taste..🍅🍅🍆🍅🍅🍅🍅🍅🍅🍅🍅🍅🍅

    Just a thought: create a path down the middle of the garden wide enough for the skid steer to bring in compost. Then you can shovel along the path, either side. Cover the path with wood chips and you have another length for the pigs in the winter. Always good content and edits!

      For sure! My husband came from a big family, and I think they were all just allowed to hold utensils any way they wanted. He's over 60 now, so very hard to retrain. 😂

    If you are serious about feeding your family year round with your home garden. You should stagger your slicing tomato starts so that you have a constant harvest over the summer. And consider fitting the greenhouse with grow lights for extended harvest throughout the fall and winter. Grow your sauce and preserving tomatoes to be harvested once and have a massive canning session.

      Extending the bed is for added produce. To grow enough grain for feed would take a decent amount more space not to mention the processing which is a task they don't seem primmed for just yet.

    If you throw the track off the skid steer. Use some pickets or 1x1 slide them between the links. Usually takes 3 to 5. When the links go over the idler or sprockets it will guide the track back on. Much more easier then a chain. Make the 1x1 wood sticks about 10 inches so your fingers don't get pinched off.

And watching Gideon basically replace their roll alongside you is a true joy to watch…we blink and little Henry will be at it..and Precious Lily always feeding everyone and being a spare hand where ever she is needed…the Rhodes are truly blessed with a great family..and I know that doesn’t happen without great parents and family influence!     You’ll an also throw the tomatoes in the freezer - peel and all til you have enough for a batch or have the time to deal with them😊. You can place them in ziploc bags or just loose - sometimes I don’t have time time to can them all until winter! Then thaw and the skins slip right off😊. You can also save the skins and dehydrate, then Powder them in a food processor for adding into soups etc for more flavor😊.

    This may not be the place to post this, I couldn't on your news letter. As you, I put my hopes for the future in our children learning all the things to be self sustained. Our vote for president does make a difference in our journey to self sustainability , due to regulations, new laws on water, etc. We can take the Amish and other dairy being targeted as examples I don't know if it was ment that way, but please don't diminish the need/responsibility/duty to vote, no matter whom you vote for.

    You are growing all this food, and it’s awesome! I notice you freeze a lot of stuff, but do you do any canning? If not you may wanna do that! It saves a ton of e if freezer space and is delicious! I freeze some things and can some things! For example, I only freeze carrots, I hate the taste of canned carrots! But I always can green beans and don’t freeze them…

    I don't know if you can get Pink Brandy wine where you are but DAMN worth the effort to grow them, they are big beefsteak like your ones, with a ruby pink flesh and can grow up to 600g+ they make the most devine pasta sauce and ketchup!! I'm in NZ south island and I grow pink brandy wine and Roma for the best flavor and flesh.

    If your just making tomato sauce just core the tomatoes as they ripen and put them in the freezer, when your ready to make a big batch of sauce take then out and thaw them the skin will peel right off then cook them down in your pot. Then your not making sauce every few days you can do it all at once.

    I always did my canning outside because it would get the house to hot and I had a grinder for my tomatoes it would take everything off for me seeds skin the tops jand you could freeze them to build op enough to can a couple of canners in one day

    Never boil my jars. Wash in hot soapy water rinse hot and then pour boiling water over jars just before adding hot contents. Pressure canning u don’t need the lemon juice

    Justin, whay did you not use a tiller on pumpkin row? Also, when you get an overflow of tomatoes, you can just put them in the freezer, whole, and take them out and can them up when you have time.

    These tomatoes look fantastic. But you won't get the same ones from saved seed. That's the thing with F1 hybrids, sadly. They will probably look and taste nothing like these ones. I think Charles Dowding has a video about growing out saved seed from Sungold F1 hybrids and they were all very disappointing to him. It's worth trying it if you have enough space in your garden, just because it's an interesting experiment though.
    If you're looking for really huge tomato varieties, I have had huge tomatoes from the Large Barred Boar, the German Gold and the Aunt Ruby's German Green varieties. They keep weighing in over a pound regularly. And I know Jess from Roots & Refuge has had her largest tomato from a packet of Dr. Wyches red variety. If you're interested, I can send you some of my seeds that keep producing large fruits to grow next year.

    Vine ripened tomatoes taste no different than when they are at 50% of their color. That is when you should pick them. They will continue to ripen to a dark red but the taste and flavor will be the same as when they were picked. You can keep them longer before they rot that way.

    You've got great tools You've invested in. Find a way to use your tractors. Plant in a way that your tractors do your work. You could've been done in an hour. Get creative! Weld your own implements for your tractors if you have to. Send one of your boys to a technical school for a week or two for welding classes. You've got enough technology you shouldn't have to do much dirt work ever.

      Microbes are ruined by tilling. This is why notill and hugelkultur is popular.. (community posts, for educational hugelkultur)

      You want notill hugel kultur for sustainable farming that lasts many generations.. tilling dries out soil and ruins the soilfoodweb and microbes

    You really need a newer Ball Canning Book. You don't need to sterilize jars if the processing time is over 10 minutes. The jars just need to be hot. Also, it is not safe to drain the juice. You are draining off needed acid for safety. Santa Cruz lemon juice is not from concentrate so not safe. For organic lemon juice use Lakewood.

    Can you tell me how Rebecca cans on a flat top stove like that? I have one and it says I can, can on it but not going to lie it scares me! Right now I can outside using 2 turkey fryer burners.
