I make this same recipe only I use cashews. It’s delicious. I also butter my baking sheet and put in a warm oven while I’m making the brittle. Pour finished brittle on sheet and shake it to thin it out.

I lost her Nov 9th of 2021 and I miss so many things about her,and this is one. I haven't had a bite of any since she last made it for me. I am going to make this. Thanks for sharing going to try this! Here is the Hershey's Cocoa Fudge Recipe, just made it and it is wonderful like momma used to make. Here goes ; Hershey's Cocoa Fudge 1950's original recipe 3cups sugar, 2/3 cup Cocoa, 1/8th Teaspoon salt, 1 Teaspoon Vanilla, 1 1/2 cups whole Milk, 1/4th cup butter Butter a 8 x 8 pan or line with parchment paper or foil Place sugar, cocoa, salt and whole milk into heavy saucepan bring to boil reaching 234 degrees, you are stirring constantly. Candy Thermometer is a good tool to have or cold water to soft ball stage When it reaches soft ball stage, remove from stove and put in a cold water bath in kitchen sink, IMPORTANT; DO NOT STIR UNTIL IT IS COOL After mixture is cool (touching bottom of pan will feel warm) Then you beat the recipe until there is no more gloss. You may add walnuts or pecans and beat in! Once gloss is gone and it has thickened up then pour into buttered dish! It is pure Heaven and so much better than marshmallow fluff and chips! Momma used to make this and it is Heaven. Merry Christmas and let me know how this works for you!
What is the wattage of your microwave? That could make a difference in the time to cook this. This sounds really good--I might add a little salt. It helps really sweet recipes. Corn syrup is relatively expensive. Old method: 1.25c Sugar, 1/4c Water, and 1/8tsp Cream of Tartar, CofT. Bring to a boil while stirring. Proceed as usual. The CofT is acidic and will catalyze the breakdown of sucrose(sugar) into glucose and fructose(corn syrup). You will not have a crystalizing problem. The CofT is very affective. Don't use too much.
Interesting you mentioned same ingredients, but different measurements on various recipes. I’ve watched 2 other videos of this made in the microwave, BUT the times were nothing alike, your time is different also. Guess I’ll need to do all the techniques to see which works for me. My Mother was the queen of peanut brittle. We lost her in 2018. I tried making her peanut brittle and it was a disaster. Have not tried again. Her recipe was a big batch. It used 1 qt of fresh peanuts. She poured it on a cookie sheet without sides. She spayed and buttered it. When she poured it out she put all of it in middle of cookie sheet. As it cooled she pulled the edges and it was very thin.
I just made a batch and after the first 2 minutes in the microwave I pulled it out to put a towel underneath it, and the sugar in syrup we're already a very dark brown so it burnt. My microwave too powerful, so tomorrow I'm going to try and do 1 minute increments 2x
I’m going to try this, but I’m worried cuz microwaves have different power and mine is old. 🤞 I made stovetop Pecan Pralines with candy thermometer and everything cuz I was too unsure about the microwave and it came out bad 😂Tasty and edible but crumbly.
I don’t want to be a negative here because this recipe looks so wonderful, however if you have cancer or had cancer, stay away from sugar because sugar it feeds cancer cells which is a known fact. Please don’t take this as a criticism, I just wanted to share this because cancer runs in my family like crazy, I lost both my grandparents, my mother and my father to this dreadful disease and I already had 3 melanomas removed and avoid the sun like the plaque just like I do sugar.
Nooo0ooooo!!!! 'A L W A Y S" toast your pecans... ALWAYS! Throw the nuts in a dry fry pan, stir constantly as they toast on medium low heat,you smell the toasted fragrant nuts,remove from heat... set aside to let cool. Then use.

I made some peanut brittle one year that turned out like PAVEMENT! Even the outside birds who aren’t picky refused it! 😊
