Most of the original film's production was based out of England as, at the time, it was cheaper than America. Lucas wanted the extras to treat the weapons like they were real so they modified a batch of real Sterling SMG's (which had already been altered so they could only fire blanks) for some of the scenes. If memory serves they even fitted them with five round magazines and fired them in some of the fight scenes. But, using one of those the real guns for the mold, they also made up a batch of plastics ones for the scenes in Tunisia where they just had to carry them around and these also got used in later films which got shot in other countries.
