The tree has to be the same genus or the graft will likely fail (the tree rejects the graft). It’s similar to transplant surgery in humans. The vascular system has to be compatible. There’s some exceptions. Some pomes are cross compatible.
I keep them trimmed to no more than 3 feet tall or so until I can put a screw through them to reinforce them. I wait until they are about an inch thick or so and then I add the screw and let them grow (within reason)
