Hey. Please i need your advice
-I need an e ink tablet that is almost like an A4 paper in terms of size
-Can allow me to use Microsoft office especially onenote (writing)
-can scan documents
-can record audio
-has good or expandable storage to store offline ebooks and documents files
What eink device is best for this?

Unfortunately, that item currently does not exist
You can get the books tab x, in which case you can have your A4 sized unit and use OneNote
Or you can get the tab ultra with a camera and scan documents and use onenote, but all those stipulations of yours cannot be solved at the exact same time, no.

why do all e-ink tablets have uneven bezels, there is always one side with a thicker bezel than the rest of the device

One side of the bezel is thicker to provide more space for people to hold the device in one hand without having their thumb always covering part of the screen.
