I really like how you explained your broth and how you can include/exclude ingredients depending what you're going for. My broth/stock is always leftovers from a full chicken and whatever i have in the fridge.
Ideally i have all my spices and aromatics but once you have those bones it adds such a nice undertone of flavour to anything and full of goodness.
