    I made this last night but didn’t have a stand mixer so I kneaded the dough for 10 mins... i made 2 baguettes and 6 buns.... it’s my first time doing this and first time to make bread too! They came out so good! Thanks!!!! This recipe is for keeps!!! 🥰

    I've made this bread twice and it was PERFECT!💗
    My family loved it. I got a lot of compliments.
    I added more butter, more honey, more cocoa, more coffee and added walnuts to the body and it was amazing. Thank you for teaching me all this in 5 minutes.

    Best bread ever tasted, my measurements weren’t even correct as had to add tonnes more flour as consistency was too wet. Turned out amazing! Thank you

    We had the same issue as many others commented..too wet. We added 1 1/4 cups additional wheat flour and it came together. Next time we'll reduce water to 250-270ml. Still a great product just need to tweak the recipe.

      Agree! Mine was very wet so I kept adding AP flour. I’m so glad you posted this as I was wondering if I did something wrong. It’s proofing now so I’ll let you know how the final product turns out

    Truly wonderful. I have made this twice now and find I had to use extra flour, almost a cup to get the consistency I wanted. Great with Bake Beans. Vancouver, BC

    Isn't 1.5 cups around 350ml. 375ml is closer to 1 2/3 cups. Which makes it like 80+% hydration. Tried it with 350ml of water and it came out great. Thanks for the recipe

    I have a bread maker and I have been using real brewed coffee ☕ instead of the instant coffee mix along with a mix of wheat and rye bread.
    I still use the molasses and add butter as well.
    I've been experimenting with a whole egg for the texture.

    Great recipe - I took a chance and doubled the recipe on the first try and it came out great. I made 6 medium size loaves. Very good recipe - I also doubled the coffee as I like the bread a little darker. Great video also. Thanks.

    Great recipe! Thank you. If the dough is too wet and sticky, what should I do? The bread turned out delicious, but I had to add little more flour. (I used a scale to measure all the ingredients) Should I use less water next time?

      Thanks! Yeah adding in a 1-2 tbsp of flour usually balances things out. Yeah you can try using less water for sure. Gradually add water until you get desired consistency.

      I also used weight measurements with a very wet dough. I added two more tablespoons of whole wheat flour and still too wet. I also I needed it about 10 minutes to get it stiff enough to handle, though still too loose. I was afraid I would throw off the yeast ratios of make the bread too tough if I did any more. Next time, and there will be a next time, I will experiment with 300ml of water to begin with. Thank you for sharing!

      Same here the dough was way to sticky, I had to add more flour which for sure messed up the ratios.

      @@jaimearaya5523 I tried 300 mL water, and it was still too wet. I had to add 5 tbsp of flour to balance that out. Next time, I will try 250 mL water.

    My dough was so sticky I couldn’t really mix or knead it for the first 8-10 minutes. I had to add almost half a cup of flour before I could handle it and it was still super sticky and I couldn’t really form it in a ball for the first rise. Any recommendations?

      If you have already done the first rise then maybe it’s too late to save it. But generally I would add more flour 1 tbsp at a time until my dough is good.
      Maybe added more water ? seems like somewhere there was an issue with adding in adequate measurements.
      Also if the dough didn’t rise then maybe yeast isn’t good?

      I had the same issue this morning. Too wet to pull together in my mixer, even after 20 minutes. Kept adding flour to get the dough right, even after 15 minutes of slap and fold on the counter. Gave up, and it’s rising now, we’ll see how it turns out. Hoping for the best.

      Thanks! 😀. Yes you can make a big load instead of making rolls. Use a 9x5 bread baking pan. Turns out just fine.

      Yes you can use instant and dry active yeast interchangeably. Use the same amount 7g or 1 packet (aka 2 1/4 tsp) of yeast.

      Cindy Leung yes you can use dry yeast. Keep the same qualities for water and yeast.

    2 cups of flour were not enough I had to add almost a couple more to get the dough to hold it tight. 1and 1/2 cups on the yeast were way too much .
    Putting that aside , the result was amazing 👏 . Thank you very much

      you can substitute it with maple syrup or brown sugar. But this would alter the taste. But It should work fine.

    I made it the 1st time the dough was too sticky/wet. I have to add a lot more flour to have the dough come together. I did it again the 2nd time something happen. I would definitely reduce same water. But Over all the bread was really good.

      Susan Z sometimes it depends on the brand of flour. Some have more/less moisture. Which brand did you use?

    May I ask whether we could cut the portion of all ingredients into half?

      May Wan yes you can divide the recipe and make half. It works fine.
      Personally I usually make full recipe then freeze other half in a container for a later time. When I am ready to bake it. I remove it and let it thaw for 1-2 hours or until dough comes to room temp.

      Yes you can use instant yeast. Found this conversion online.
      1 teaspoon active dry yeast = 3/4 teaspoon instant yeast
      Roughly you will need 1 and 3/4 spoon of yeast.

      You can add a pinch should be fine. but if you really don’t like the coffee taste at all. Best to leave it out. Don’t add anything extra.

      Thank you :). I usually use fleischmann’s instant yeast. (Fast acting). That’s the one most commonly available.

      I would recommend using wheat flour. But you can use all purpose. It will taste different. If your dough becomes runny the. Add 1tbsp of flour until it’s normal.

    Mine become super watery and I double checked your recipe. You said 2 cups or 240g of bread flour. I follow the grams that what it makes it wrong. I checked how many grams is 1 cup it is 250ml or 250g, so I was short 1 cup. I have to redo everything 😢

      Did you mix it well enough? I always do 1 part flour to 2 part water and it comes out fine.

    I’m converting this recipe to my no knead method. Actually it’s almost the same as a pumpernickel recipe which I make no knead and I’m tweaking the ingredients some. My no knead ferments overnight, bake in the morning.

    I tried it and i used a loaf pan to bake it in and it didnt bake all the way through. Any suggestions on how long I should bake it in a loaf pan?

      I honestly have not tried baking this in a pan. But you can try and bake it for 40 mins first. and then bake it for another 30 minutes by covering bread with aluminum foil. This way bread won’t burn.

      Monerah you can substitute it with maple syrup or brown sugar. But this would alter the taste. But It should work fine.
      They are pretty delicious. And tastes just like the ones at cheese cake

      We had the same issue..too wet. We added 1 1/4 cups additional wheat flour and it came together. Next time we'll reduce water to 270ml. Still a great product just need to tweak the recipe.

      Yes you can do it. It will just taste a little different. It should look and rise the same.

      Yeah you can definitely do that it will still turn out great . But it won’t taste the same as cheesecake bread.

    Ive been having this bread for breakfast all week w butter n coffe i only wear pjs n leggings so i dont care anymore if my real pants dont fit ...i dont have a mixer considering investing in one or just buying made @ the market ..just to make @ hone i need to spend over $300 😏🤔$5.99 @ market thats y i would go to cheesecake factory to bread n ☕ 🤑if i get a mixer for christmas i will make this

      Fair point!
      If you are gonna use a mixer for more than 1 thing. Then buy it. My mixer gets used every day to make bread.... Yes we make bread everyday for lunch and inner.
      But In the end you can use your hands and kneed the dough old fashioned way 😀
