Hi Pati. One thought to get more chicharron de queso, spreading the cheese around the edge of the tortilla. Better than that, maximize by putting the cheese down first and putting a warmed tortilla on top of melted cheese and remove with spatula. Thanks for your videos.

Pati, I love these tacos. Some history behind these tacos: Why "Tacos Gobernador"? One of the main theories out there is that during the 1986 election campaign for governor in the state of Sinaloa, Mexico, one of the main candidates from the PRI party, Francisco Labastida, made a late evening stop at "Los Arcos" one of the most traditional restaurants in Mazatlan, Sinaloa. The owner, Fausto Angulo, and his chef came up with these tacos in order to put out something quickly that could feed a small crowd since the general menu items would take a long time to prepare that late at night. Well, Mr. Labastida, won the race for governor, became a prominent (not so loved) politician nationwide, and the tacos became part of the menu, and eventually spread all over the pacific.

Whole Foods Trader Joe's my local supermarket is lucky's & I find them where the Italian can tomatoes are. The brand I use is cento. I know that in a tube it's so cute but they really rip you off for example a can of tomato paste is about $.50 in a tube for half the amount what's in a can they charge you $4

Every time I go to a fish taco restaurant (yes, we have those in northwest México) I gotta have one Taco Gobernador and pick something else from the menu.
