Gloves prolly the dirtiest,most of the people didn’t even change it after using the bathroom or after collecting the money,in Japanese culture,sushi chefs got the cleanest hands,they wash their hands multiple times a night,and their hands can’t be too warm,it’s bad for sushi and you need to feel the sushi,with the gloves you can’t feel anything,being a sushi chef in Japan is pretty strict.
