My mother recently passed away, she is beautiful woman and passionate about her food and family just like you.
I would cook for mum and vice versa, my cooking never compared to hers. Before she was taken ill she started teaching me her recipes (as if she knew what the future was bringing). Sadly there are still quite a few that she never got to share with me. "Now you can always eat well" she would say to me after cooking together. Her recipes were passed to her from my nonna and zia and now to me. I know I am broken but until I start cooking and eating, watching you brings back such beautiful memories.

My friend's grandma was Spanish (born and raised there) and she made this dish. Only the spices were a bit different. But eggs in tomato sauce are so delicious. Everyone should try! You hit home run again, Laura.
This recipe is so basic, but really phenomenal. I love to have it for breakfast and serve it over old fashioned oats. I also add some fresh basil and parsley at the end. The perfect meal!! Thanks so much, Laura!

Hey Laura... I made this last night. I had a prosciutto marinara sauce that I used the previous night for baked ziti. It worked just fine. I broiled it instead of covering it on the stove top. Gave it great color! Thanks for the great ideas! I love your show on youtube. I am a subscriber, and a chef as well. Cheers!

Lakisha Calzado It is so cool to know about other cultures, especially about food. In Mexico we call Huevos Rancheros a dish made with fried eggs on top of fried corn tortillas, topped with salsa: which is basically green chilies, tomato, and onion all diced and cooked to make them soft. You serve them pipping- hot for breakfast or early lunch. Buen Provecho!

Looks like a fun and easy recipe! The one thing I really enjoy, is that your (one of a few cooks I see on the net) that uses fresh cracked pepper. It can make all the difference in the world.
We call it Shakshuka in my culture.

I just made this tonight and it was delicious. I added cubed eggplant because I had it in the fridge and this recipe reminded me of Rachel ray's ratatouille with poached eggs. I sautéed the eggplant in bacon fat, added a little olive oil and served it over yellow rice! I used basil instead of parsley.To die for! Thanks Laura

I made this using using deer steaks I chopped up , I have a enormous amount of eggs due to our laying hens and this was a big hit for noon dinner.
Wanted to try this recipe but had no meat. So I did it with your anchovy idea for the extra salt factor. Worked out perfectly. Thank you.

My mom did that when I was a kid. I miss this recipe. My ancestries is Italian and my mon is the third-generation of an Italian family in Brazil. I loved eating.
This is a very famous food in Mautirius. we cook it with fresh tomatoes. The base is onion ginger garlic, cumim powder, the add fresh tomatoes with a bit of thyme the when the sauce is bubbling at the egg of course dont forget to add fresh chilli and finish it with coriander, We call it 'rougaille di eouf' simple eggs in tomato sauce. Its is soo yummy!! Thank Laura you remind me of my childhood.

What a coincidence. This is what I had yesterday for dinner (except it wasn't on rice, but on toasted bread). When I watch all these videos I realize how much I am lucky to be italian. I'm an Indian (Singaporean). We have something similar here as well. But instead of tomato based sauce, we use chili. We call it the Egg Sambal. Sambal basically means a chili-based sauce. Its more of a South-East Asian cuisine cause the Indians, the malays, indonesians all have their own variation of this dish. :)
My mom always made this growing up.. it's one of my favorite dishes. now I'm in the mood for a plateful!

Made this for my grandma - who is usually SO fussy about food - we had the meal in silence apart from "mmmmm"-s all around! Loved it! Made it with a finely chopped onion instead of the bacon. Amazing, am definitely making this several times a week xxx

It's a different recipe... Eggs in purgatory is tomato herbs and egg, maybe some cured pork....Shakshuka has peppers, cumin and other spices that make it more complex. Both are delicious!
Laura, about a week ago I found Passata in a near by mini-market ... I was so excited and bought a can. I tried it with potatoe alla pizzaiola. It was pretty good xx
