    Thank you Alex to remember us what the result of your intense work and passion is. Not only the final outcome, the 10 minutes videos that we all enjoy but so much more... you are making a journey, driven by your curiosity and your talent and at the end that is what we like the most. Feeling part of a community of people with an interest for discovering and pushing our curiosity wherever it drives us. And yes, we all felt in some time of our lives how you did when you, a french guy, tried to make one of the most amazing, delicious, simple in term of ingredients and astonishingly complicated in term of outcome as a croissant. Lost at the beginning, afraid in the middle and achieved at the end.

      On some video's where he shows his bike, there is a bracket installed made by GMG Yepp which is a kid seat for the back of the bike ;)

    I think two things that Utopie does that Alex doesn’t and can’t do.
    1. They pour water into the bowl first, allowing most of the flour to hydrate as soon as it touches water.
    2. The butter they used, it’s got less water content and they said it cannot be bought at a super market.
    Still, Alex has achieved something amazing. I also never made puff pastry in life. This series let me really appreciate flour and what can be made with it. You have left me inspired to attempt to make more pastries, I have only being subbed for 1-2 weeks. I watched the whole series - I have to admit I was scared 😧 but yesterday- I tried my first puff pastry. It failed lol, but going to keep going.

    You came just at the right moment with this epiphany: I'm a chef, I'm just 22 but I've been working in kitchens since I was 17, always abroad, speaking a language that is not mine and doing a profession than I always believed I will never own. Apparently I will hit another stop with the first well paid chef position that I ever landed and I know it's going to be rough, I'm tired of employers/Head Chefs telling me that I don't do enough, not fast enough, not energetic enough, I'm not precise, I do not learn, I do not talk.. that I don't give enough. I always say to myself that at the end of the day maybe that wasn't in the right place or with the right people to work and give my absolute best.
    Even though it hurts me every single time.
    Simply because I do not have a solution for instant improvement and I'm too young to be humble to myself and "understand" that these people are right at the end of the day and that apparently I'm not enough. Even if my performance is as imperfect as your croissants ( Wich I highly doubt because they look amazing, Chef to Chef) I know that I'm more than that talk that I get at the end of my adventure at the next restaurant, maybe I'm not a Chef but I'll always be grateful that I have been, even for once.

    Beautiful lesson to learn , Alex .. I am a watercolor artist( norakag on Instagram ) , and after twenty years of not painting ( due to life and it’s ups and downs) , I find that I am in a wonderful place of being hungry to learn, and knowing that each sketch or painting is a step along the way, and that, as you say, there is no such thing as perfection .. we seek something that we have set as a goal in our minds and hearts, and the goal should only be one part of the intricate chain of growth !! I LOVED the end of your video !! So touching and THAT, Alex , was sheer perfection !!!

    Something about this took me by surprise, a pleasant one. The sudden format change was invigorating (keep using it, but sparingly, keep it fresh like this :) ).
    I was fascinated, not by the croissant but by you and your message. This video was moving, it made me smile and feel inspired. As you said, ideals are indeed unattainable yet reaching for them keeps us alive - I am thankful as your videos allow me to feel a part of such a journey.
    I loved how you finished the video by going to give your kid a tasty croissant because it is like metaphorically passing on a taste of the experience gone into its creation which is the real value (also it looks very tasty!).

    I heard from my family about the heat wave. 49.5 degrees c (~115 f) is absolutely insane. I hope everything is going well, since I can almost guarantee you don’t have air conditioning.

    Hey alex I love the video, I am trying to become a chef and I found your videos only a couple weeks ago but i've been watching them ever sense and you have inspired me to take it to the next level, and videos like this are extra inspiring because I live in a household where my family sees cooking at stupid and a waste of time and when I mess up they use that as why I should quit but I've always kept this outlook of I didn't fail, I just learned how to not do it next time. Seeing this video really hits home Keep up the great work my friend!

    hey you did great. not everyone has the talent you have. It is not imperfect, its perfertly your own version. that simply shows how you mastered the craft of creating your own version, your own twist, your own roll and most importantly your own style. That is something no one can judge you on. I have been following this story that you wrote and we are wishing that we can live or experiece once in our own lifetime. But you lived it you could say "been there and done that" moment, and we thank you for that because. Just because you shared it so lovely and so perfectly you. thank you.

    I have literally been hooked to your channel since the past two days, and all of your series are so inspiring. I can only dream of reaching that level of commitment and perfection.     Every time I try to cook a certain dish, someone always tell me that I didnt do a good enough job, therefore I have always treated it as a failure. I had never heard someone say something like this to me. Every time... Every time I cry after "failing" to cook a dish just because the result isnt what I imagined or expected. And this is exactly why I love your videos, you are not reading a recipe, but explaining the science behind everything. Every step, every details. In this video you literally taught me how to overcome "failures" in cooking. After watching this video, I learnt that cooking isnt always about the result or the product, but its also about the "ride" and the process. I love cooking, but the results always gets me crying. I think after watching this video, I know how to look beyond or overcome "failures". Make sure to keep up the high quality videos and tutorials. Thanks for teaching me so much. :)

    As you said, this is not your usual format, but it did not feel out of place at all !!!
    I think this is my first comment on your channel, but I am writing it just so you can read once more how inspirational you are. You are just even more inspirational in this one, but in all your videos, you see the good in your failures, you smile, you explain as clearly as ice water why you think you failed, and you get back to it even stronger !

    ... that last part was literally loving that very same memory of your grandmother by delivering , through your best croissant, an "I love you" message to your kid.
