I thought you had used a thimble before when you did handsewing. Are you doing a backstitch every inch to strengthen your running stitch? Backstitch uses slightly more thread than running stitch but gives a bit of strength to long seams. 🐱 Thank you for your video.

It appears that she is doing that. I had not noticed until you mentioned it. I'll add that to my repitoirre. It would add stability to the seam. You've got a keen eye...
In patchworking, if you piece by hand, every third stitch is a backstitch to strengthen the seam & also, the whole seam doesn't come undone if one of the threads break.
