The Modern Rogue Do y’all go to a bar in Dallas called ‘The White Castle Exchange’ or something like that ?
I can now cook stake even better!!!
The Modern Rogue Gordon Ramsay would definitely enjoy this
The Modern Rogue This isn't amazing
I love Jason after hearing there is going to be a fight over the bone at 34:30 quickly and discretely secures the knife.
Played it like a true rogue.
Its like the cook is trying to teach spongebob and patrick how to cook a steak lmao

"But dad, what if they don't want Medium rare?"
"We ask them politely yet firmly to leave"
*unless they want rare*
Wolf's Den then we will politely ask them to leave because people rarely get rare
Honey, don't teach our son bad habbits. Every steak is a good steak. Except for well done. Once we've asked them to leave, we make sure to take them off of our christmas list
They send me to slap their face with a raw steak
Its called Well Done for a reason. Our Hunter-Gatherer ancestors just TOSSED meat at a fire and ate it WELL DONE
When you click on a 45 minute video to watch 1 or 2 minutes and then 45 minutes later you wish there was more.
Lmao, I had to go back and check that it really was 45 min, I didn't even notice.
Only Modern Rogue would need to specify Cooking Steak (Without thermite.)

Seeing a living Jerma joke in the comments is always a treat.
Backyard Scientist might have to as well.
dont cook your steak like this buttered steak is for yanks
@@moves3297 I would've prefer it on a grill for the added flavor
This guest is really cool! He's such a pro but doesn't insist on doing it his way, he's just like "yeah if you like it that way, do it that way. Just find your own mojo". Love it when professionals aren't arrogant tools
It means he is a pro in a way that he has a wide knowledge about that area, and he likes the stuff in many ways rather than prefers only one. Others meanwhile, with whom you could compare, like it specifically in one way, they prefer it that way because of their own reasons, not necessary bad, but would be better if they could explain and argument other methods as well...but then again, people who prefer one method is because for them it seems easier and result for them seems better, which...could or couldn't be either subjective or objective, it can depend from what you are doing. I mean, there are things you can do only in one way...so yea, just because someone would insist doing something in one way, means that the other probably doesn't know what they are doing in the first place.
So basically it narrows down to what you are doing, and what knowledge you have about it in order either be like "yea, you can do it this or that way", or just be "nah man, you can't do it other way, because of this and that".
There's a saying I grew up hearing; "There's more than one way to skin a cat."
I like to add "But there's a best way."
Definitely. This guy is great. He knew how to play along but also when to say what he had to say. He's got done great social skills.

I love how Kent just puts up with their shit long enough to give a polite reply and then start talking about the next subject.
that's exactly what I admire about him .... but there was a second when he was really fed up with them, I think ... for instance at 11:30
Since my surgery I have binge watched nearly all your stuff, even stuff I had already seen. Reminds me of hanging with my friends. Keep up the awesome show.
Thanks! Hope your recovery is going well.
Jason Murphy amazingly. Thanks.

I always love listening to an expert that's passionate about his area of expertise. Another incredible video, guys.
Thanks!!
I call it passion and I look for it everywhere! It’s my favorite part of life to see someone express their passion
God I love Jason.

11:44 the poor guy just doesn't know how he ended up with these two. xD I just love those moments where Brian totally loses it!
This episode gave me the meat sweats, high cholesterol and a hankering for a rye and ginger! It’s 4:30am and my mouth is salivating uncontrollably… great video!
My favorite thing is when MR brings on guests, and they are completely unprepared to deal with Brian's and Jason's shit
Itsacabbage
Yup, the chef with zero sense of humour - but anybody who does rear-to-ready has my respect. Just eat his food, don’t go drinking with the guy!
Itsacabbage it was entertaining
I was looking for this comment.
I don’t, they’re not even funny, they’re like two lame radio announcers.
Well then don't watch them
This poor guy lol, he's trying so hard to make it like a real cooking show and you two are just cracking up, it's hilarious. Good content guys, would love to see more with this Butcher, he is great!
this si by far my favourite episode of modern rogue, It's not flashy or experimental, its two guys talking to an expert on how to enjoy life. It's wholesome, it's interesting and it's a lot of fun to watch.
I’ve watched this episode at least 6 times all the way through since it came out... Top tier every time.
Jeez guy 🌚
can you guys do an episode on how to sharpen knives? maybe do pocket and kitchen knives. it's something I've been struggling to get right for the past 15 years.
Soeveth Google it
Soeveth or you know crazy Russian hacker and zombie go boom did a UA-cam video
Yes, you can find this elsewhere but it would make a good episode and it fits the channel theme very well.
In the meantime, Jun of Jun's kitchen can get you started. You basically just need some sharpening stones and a bit of practice. You can buy a cheap rusty knife and practice on that.
ua-cam.com/video/3XW-XdDe6j0/v-deo.html
You can also get a pretty decent sharpening system that gives you a really good edge for very little skill.
See, I saw how long this video was and thought "I'm probably not going to watch all of it but I'll have a look at the first few minutes" and lo, it's 45 minutes later, all I did was watch three people cook steak, but I enjoyed, (like really *enjoyed*) every second of it.
So glad to hear that!
same here
I now want steak
Finally, a video where the guy tries to cook a medium rare and it actually comes out medium rare. I think I've watched 30 videos on cooking steak over the last couple weeks and this is the only one out of all of them that actually got it right. It's really surprising how many people think medium is medium rare. Thank you.
I am a steak master on the gas grill. I've been grilling steaks with and for my family for about 40 years now. Even, I leaned some new tips and tricks today. So, a hearty thank you for having Kent as your guest. A huge thank you to Kent for his amazing advice, instruction and tips. We actually had Rib-Eyes for Thanksgiving this year so you know we love our beef! We often use the skirt steak, marinated overnight in a special marinade seasoned with kosher salt, fresh cracked black pepper, a bit of garlic and hints of cumin and chili peppers to make Carne Asada. Grilled, rested, sliced and served in a tortilla with my home made pico de gallo, (roughly translates to peck of the rooster or 'rooster bite') which has a nice medium spicy bite with a great balance between the heat of the peppers and the flavor of the diced tomato, cilantro, white and green onion and finely match-sticked radish (a long dice cut that looks like a small match stick and I slice the green onion into tiny little circles), fresh minced garlic and a squeeze of fresh lime (or lemon is ok too) I stir that all together with the diced mixed jalepeno/other hot&mild peppers and let it sit in the fridge over night with the marinade. It's a hearty, chunky salsa fresca so no cooking required. Just salt to your taste and it's ready but the flavors combine overnight and make it more flavorful. It's a great chip dip or topper for any grilled steak. If you want a creamy dip just add cruhed avocado and it's suddenly my guacamole recipe. For a milder version I add diced red, green and golden bell pepper in larger doses than the hot peppers but we like a good spicy medium heat here in the Arizona desert. It stays good in the fridge for at least five days but it never lasts more than two before it disappears. :) It's a lot of knife work so it's a special occasion thing and my family is worth the effort when I can take the time to make it. Like so many of our favorite dishes there is beef at the core :) Thanks again!
Wow - everything sounds amazing. Thanks for sharing!
Yum!
I'm a meat cutter at Publix supermarket, I so wish I could have this video play at my meat case 24/7 Great video!

One of the best videos I've seen in a long time on the breakdowns of steak and how to cook, and I worked in food in the past. Great job guys, I'm quickly becoming a huge fan of all your videos. So much fun, and educational at the same time!
No BS, this is EASILY the best cooking instruction video I've ever watched!
Good video. Felt bad for the guy at first, but he seemed to catch on to the comedic tone pretty quickly. Excellent solid fundamentals video. Like you guys said, we all know the guy who has ‘cracked the code’ when in fact he’s totally clueless.
just spent 45 minutes watching a video about cooking steak
best 45 minutes of my life i've spent
AMEN! PREACH BRUTHA
poor guy, had to deal with these knuckle heads. you can see his face when hes annoyed
I just realized how neat and detailed your description section is, you even linked a babish video for cooking steak (love him!)
Love the extra effort you guys put in
Thanks! It's usually such a simple step that can really enrich the viewing experience if people take the time to dig into it. We usually don't do things like the table of contents unless it's a super long video, but something like this video I like to think it really helps. Babish is great, we didn't actually use his video for any reference, but whenever I run across something that serves as a good complimentary video, I try to include it.
Guy is looking like he is having a Rammstein concert after as main singer
MOSKAU i was wondering who he looked like
Younger Texan version of Till Lindemann😮😚😆
He is definitely Texas Till.
Great job on this video guys. I respect the Chef on this one - not an egotistic cooking snob like you see with most Chefs - especially with beef.
Props and shout out to the Chef.
"No fork near the meat till it's ready to eat" was my mother's advice. Glad to see tongs in use here.
This episode, the one where Kent makes burgers and the ones with Trevor at the bar are my favorites.
I've watched the burger one at least 10 times.
I usually have a hard time building up an appetite, but whenever I watch this video I get SO hungry.
“Holy shit 45 minutes!” *Ends up watching whole thing*
I watch this video almost every time I cook a higher end steak. This dude belongs in every episode of MR.
One of my all time favourite episodes! Nice work!
No matter how long the episodes are, I know I'll enjoy watching them. Thank you for this goodness!
Thanks for the kind words! Help us spread the word... we'd love to hit 1M over this next year :-)
Ok, we did beer, whiskey, now steaks. Tell me cigars is next.
+Brains for Dinner already recorded two episodes.
The Modern Rogue Thats awesome! Cigars sound like they'd be right up your ally.
Once you've had a cigar you'll never go back to cigarettes. They don't make your clothes stink or give you lung cancer/other lung issues (because you don't inhale the smoke), and the smoke is so much more enjoyable, taste and texture wise.
Pipes are also nice but there's a lot more equipment that you need, which is good for people that like the ritual of smoking.
The Modern Rogue I knew I could count on you :)
What about pipes? Not devil's lettuce pipes, but proper pipe and match with loose tobacco.
Joseph Stassup now I miss my old cherry wood pipe... :/
37 mins in - realizes there’s a whole other steak... 😂
Seeing that ribeye come into frame, it was O R G A S M I C
For the red wine reduction there is a Binging with Babish sauce where he adds shallots, butter, and lemon
Then the Fond forms after the steak add chopped shallots until they brown then add the wine until it reduces to coat the back of a spoon. Next add about 30 grams (2tsp) of butter. Then reduce until it becomes viscous then add lemon to cut through the richness.
ua-cam.com/video/Upqp21Dm5vg/v-deo.html
Can't speak for the rest of the crew, but I've been watching Binging with Babish for a month or two now, he's great.
Recently made that pan-sauce with a nice slice of duck breast. Lemme tell ya, good meat with a good sauce and a nice drink is all a meal needs to be delicious (at least in my opinion)
I have yet to see someone deep fry an entire steak.
NeedsMoreBoosters chicken fried steak. It's a thing.
Actually in my experience its fairly common in the restaurant industry (at least in Australia) if youre in the weeds during service and youve got all your steaks sous vide (also a phenomenal way to cook a steak) just to drop it in the fryer for 30 seconds to a minute
It doesn't do too much harm to the meat (it might overcook slightly but it gives a great, even crust) and its something that id reccomend at least trying sometime if youve got even a small deep fryer
But at the end of the day it's just a finishing technique, not a way to cook a whole steak
Don’t put it in frozen.. just a tip.
Your butcher is an unreasonably attractive man.
im glad i wasnt the only one
he reminds me of a more attractive Andy Bernard
I don't know what it is but somehow his way of pronouncing some words makes me think he's gay.

OOOOHHH I saw what you did there
45-minute Modern Rogue? I thought it was Thanksgiving, not Christmas!
Grass feed and finished. Organic. 1. *Sprinkle with salt(*light coating/both sides and edges. this will NOT be washed off and will penetrate the steak 100% ), set in a clean fridge for 12-24hrs(quick and easy dry aging), lil peppa, bring to room temp, grill to your liking. 2. Pineapple puree marination for 2-4hrs, rinse & dry, lil salt n' peppa, bring to room temp, grill to your liking. 3. Sous Vide! These ways also rock! Enjoy!

Kent really did an amazing job. I really like cooking and after watching this video I did a bit more research on my own. I like how he acknowledges that there are other methods that might produce good results, but the methods that he presented are a very consistent and time tested way to cook good steaks. I would say you will not go wrong doing it this way and after you mastered those methods you can try your crazy ideas ;)
I also liked how he showeed different methods to achieve the same result (pan vs. broiler for example) and the last steak, where he purposefuly didnt get a perfect crust. Very< educational and good video.
For those of you who were wondering, the Augustus Ranch is near Yokum, Texas. That's in southeast Texas, roughly between San Antonio & Houston. That's "real cowboy" country. I looked it up because our chef here doesn't have a pronounced Texas accent.

Just watched 45 minutes of steak cooking.. NO REGRETS!
I tried this cooking method with a $6 strip steak from Walmart and it ended up being one of the best steaks I've ever had. I also tried it with chicken breasts using olive oil as fat and sea salt, cracked black pepper and garlic powder crust. SO GOOD
These kinds of videos are quite good for playing Find the Vegan
Not it.
Playing steak videos for vegans is like a bi guy playing gay porn for a lesbian. It's kinda mean, kinda pointless but sometimes it's just kinda funny. And sometimes, they surprise you.
Vegetarian here, love these videos & hate when my fellow vegans play the moral high card
I get it when vegans are against large commercial farms and unethical treatment of animals. But my brother has chickens, he loves his chickens. They are very well cared for, and produce the best eggs. I don't understand why not enjoy the eggs. Eggs are the perfect food, cheap, abundant, easy to cook, but hard to perfect. Nothing better than the perfect poached egg, imo.
We made some awesome deer steaks using these techniques, thank you guys
So far this is the best episode period.
Not to nitpick, but that's a carbon steel pan, not cast iron.

This was really good explanations and it was funny. Good job gentlemen.
My dad's recipe for a marinade is 2 parts Italian dressing, 2 parts Soy Sauce, 0.5 parts hot sauce. Once you've marinated it, you take it out, lay it down, and season both sides with whatever you want (though I recommend the premade Italian seasoning mix you can buy in stores with freshly ground pepper and salt, as well as a bit of garlic powder and just a little little bit of rice vinegar to help the spices mix). Genuinely one of the best steaks I've ever had.
