I don't know how you were guided up to that market, in El Alto, (a border city near La Paz) but I am glad that you enjoyed the food, even the chuño (black potato). I live in La Paz and I avoid eating there, as I consider there are better street food places to eat in La Paz. After watching your video I will consider change my mind and try new flavours.
Forgot to text that besides fried food, there are other options as baked Salteñas or baked llauchas in the morning, humintas in pot in the afternoon and anticuchos at night. Also there is a variety of sandwiches: avocado, chicken, porck, etc. Preparation is different from others you tried.

That postre in Relleno de Postre is the way we call the ripe plantain. I am not yet familiar with some parts of the culture so hopefully a native Bolivian will explain better why it's called postre (plátano postre) co's postre actually means dessert. I'll ask my husband too.

i'm in la paz right now, it is near impossible to find food not cooked in salt, taste of nothing but salt and deep fried. the food is 95% terrible.
