  • Hello There Friends, I wanted to share with all of you my First experience of making a Poke Bowl. Call it whatever you like just know it's not traditional! Let me be the first to say that this came out AMAZING and absolutely delicious! I highly recommend that if you can find the right ingredients you should try this for yourself!     No cuts. No extreme editing. Just a plain, simple, fun and lovable cooking show from Chef. "We don't do anything boring in this kitchen" is exactly right!

      I'm too clumsy w/open shaker bottles. I'd have to pour ingredients into My hand, then put into bowl. CJP has the experience & was careful.

    I would LOVE to see Chef JP do more Non-western dishes, but in his own interpretation. I'd love to see his take on Butter Chicken or a Middle Eastern Lamb dish.

    This chef not only knows his subject - cooking - he understands it, and that is way beyond mere knowledge. Above all he knows how to share his knowledge. I follow two other chefs on this media, who have taught me a lot, but I dare say chef Jean-Pierre has taught me the most. I am amazed that I get this for free and sincerely hope he gets a lot of remuneration for his efforts. ❤️❤️❤️

      I agree, Chef Jean-Pierre is an awesome chef and teacher. I feel likewise about Jaques Pépin. No matter how simple or old the recipe & video, there is always something new to learn from Chef Pépin. There are a few others here too ..

    Wow I never saw dill with carrots; you said like it's perfect. I will have to try that out, dill is the most undervalued unappreciated herb ever, and it goes so well with potatoes, fish and many more things.

    Hawai’i born and bred here. Great poke’ bowl chef. Pronounced po kay. They are delicious and versatile. Traditional poke’ is very plain. These days it’s all about variations in sauces and ingredients.
    So much better! Love your recipe. Thanks!

    POKE!!!!!!!! I go tuna fishing every year off Washington / Oregon coast. Poke is a favorite, love making it! Cheers Chef!

      I am so jealous!! I love fishing and I love tuna! My younger brother worked on the tuna boats down here in San Diego back in the day so we would get treated to fresh off the boat chunks of bluefin and yellowtail! Yum!

    Aloha Chef, It's pronounced PO-Kay. I always make it with cucumber, avocado and sesame oil. Yours looks Delicious, but than again I have always enjoyed your work. I use to dine the Left Bank severval times a month in the early 90's. I managed a club down the street on 17th. Aloha Pussycat

    Great dish Chef! It’s truly a treat to eat so many different assembled bites. I love how you clean as you go. That in and of itself takes some of the confusion out of preparation when a dish has multiple layers of prepped ingredients. Thanks chef!

    Back 30 years ago my younger brother worked on some fishing boats here in San Diego. There were times he'd cut a whole tuna in the garage on a work table and hand it out to whoever stopped by. One of our favorite things would be the deep purple meat behind the gills we'd cut it super thin and lay it out on a plate. Then heat some good olive oil with garlic and chile peppers until it was fragrant and drizzle that hot oil on the paper thin slices of tuna, a touch of kosher salt and it was heaven!!

    Chef, I can’t speak for everyone but I for one love to see you try your own dishes, and don’t mind at all if you can’t speak for a little while when you do. Your face says it all! Would love to see you try all the components in a dish, take a few seconds to enjoy it and then talk about what you’re experiencing. It wouldn’t add too much time and trust me, we love it! Your videos are fantastic and inspirational. Keep doing what you love!

    Afternoon Chef J-P, that bowl of good ingredients looks so fresh and appetising!! Not many ingredients, but much preparation. The main item is the fish, start on that so it can marinade well. I think the tuna would also be the most expensive, how about some smoked Mackerel? All the liquids it's a splash here and a dash there no wonder it is so tasty. Many flavours mixed together but all complimenting each other. I am sure you had a most enjoyable time eating all that deliciousness. Thank you for sharing and showing, kind regards, go well.

    that's the kind of thing that you can eat that whole bowl and when you're done you feel amazing. poke bowls are just about as good as it gets. this one is easily one of the best i've seen. best chef ever: retires then decides to teach everyone and have fun at the same time.

    Hello Chef Jean-Pierre. Just on a sidenote. I am now going trough the prep for major heart surgery. And every night now I watch your videos because I want to "LIVE" after...so I can make all this fantastic foodwork real for my wife and family. Your videos are one of the things I love to watch before bedtime and I hope I Can write a comment to you on "the other side" of the major surgery. See you on the "other" side my Chef. I have so much cooking to do to.......All the best wishes from Norway and me Chef. Do Not stop making the "real" food. And please...I hope the surgeon do not say...haha...even a child could do this and we will freeze him for 17 years! LOL. :)

    You wish that we were there? Be careful what you wish for Chef, because I can get on a plane soon and visit! I have never tried Hawaiian cuisine before, but I am a big fan of Japanese food and, particularly tuna and salmon. This looks truly amazing! Keep the great food (and style of course) coming!     You bring good memories back to life.
    I was watching when you where busy with the sauce and then you say, play with it, be creative...
    My mother made a simple sauce, some vinegar, bit mayo and sugar, ( because of the vinegar ).
    I still use that sauce, the basic, but like you said, be creative and now, sometimes raw unions in it, or chili sauce, or whatever is in my mind and yes, sometimes i also say, ok, don`t do that ever again.
    Maybe people are scared to fail, they watch your channel and wanna be perfect directly for the first time.
    best advice from me, and i am not chef, i am not sponsored or earn money for any comment from me, but fail, screw up, disappoint your whole family, or friends, you will then enjoy way more, when you receive the first comment , wow, last time, omg, but now, that amazes me.....

    Im from finland and we eat red beat sallad with majonaise and i love this sallad if its julienne if cut in cubes somebody else can eat it. So really texture is a conductor of flavor.

    This one is great...love the cucumber, avocado, carrot combination with the Ahi Tuna. Perfect for refreshing down in hot weather. One good very cold beer will go well with it.

    Great advice on how to choose the fish: it should NOT be smelly! Try bigger chunks next time, that way you can get a nice chew... That Tamari you recommend is THE BEST! The sauce you made is amazing.. kind of like a teriyaki sauce. My only suggestion is this: use some KOMBU seaweed as a vegetable or garnish: it will give the dish a wonderful taste and smell of the ocean. Traditional Poke is made with fish, Hawaiian salt, and seaweed.. nothing else. Adding the seaweed will bring a touch of tradition to the dish and tie it back to the ocean. (PS: been eating raw fish since 1972 when I was a kid)... BRAVO AT YOUR FIRST ATTEMPT! GREAT JOB!

    Beautiful flavours and prep ❤ I bought one of those julienne peelers off ebay and they are fabulous and inexpensive if you eat a lot of salad - has a regular peeler on other side so can make noodle type veggies, super sharp so be careful - make things so much easier.

    For your first attemp at a Poke (Poe-Kay) Bowl you did very well. If you dont have Japanese sticky rice, Jasmine rice is a good alternative. Good job Chef. Give the editor an extra helping for a doing a great job too! 👏

    That looks fabulous!! I’ve never eaten raw fish - not sure if I’m adventurous for that. But some grilled fish would be wonderful, too!! Gotta try this!! You make everything look sooooo good!!!

      If you can get to a fish market by the ocean that has a daily catch its okay to eat raw tuna. It's amazing!
