NORWEGIAN MEATBALLS WITH BROWN SAUCE⎜VEGAN KJØTTKAKER 🇳🇴

  • First of, I gotta apologize for my tired face in this video, I was very sick this week, fever and all, so sorry for that!! 😜and now... to the recipe:😘
    This dish is a must in every winter lover person, this simple comforting Norwegian dish is what you need for a cozy warm winter night. And oh, super duper easy to make.

    INGREDIENTS:
    For the "Meat" cakes:
    1 tablespoon of oil
    1 Lb vegan "meat"
    1/2 cup all-purpose flour
    1 teaspoon paprika
    1 teaspoon vegetable bouillon
    1 teaspoon onion powder
    1/3 teaspoon black pepper
    salt to taste - if needed
    a pinch of oregano
    pinch of ground nutmeg
    1/2 teaspoon of baking soda (optional)
    1/4 cup of water - if needed
    Lingonberry sauce
    -------------------------------------------------------------------------
    Brown Sauce:
    ¼ cup vegan butter
    ¼ cup flour
    1 teaspoon onion powder OR a small, raw onion, finely chopped
    2 cups of water
    4 teaspoons of vegetable Bouillon (or 2 bouillon cubes)
    ¼ cup vegan cream
    METHOD:
    Add all the ingredients for the "meat" cakes to a bowl, mix well until incorporated
    Form small or medium-sized cakes, add them to a skillet with oil, fry them for about 5 to six minutes on each side on medium heat, remove from the skillet, reserve.
    Brown sauce:
    Add the butter to a saucepan on medium heat, wait until dissolved, add the flour, stir for about 6 minutes or until golden brown.
    Add the garlic powder, the Boullion, the nutmeg, and black pepper, stir and add the water little by little and stir until all is smooth and lump-free, then add the vegan cream.
    Serve the kjøttkaker with boiled potatoes, Brussel sprouts or cabbage, lingonberry sauce, and the brown sauce.

    Nice to see you in my neck of the woods, Chef Jana❣️ Hope you have a great stay❣️ Another dish you may try is «fårikål» («sheep-in-cabbage») which is a typical autumn dish. Cabbage and meat in layers with whole black peppercorn. I use dried soy medallions (I order online from veganermat dot no since I live in a small town). I make a marinade with spices, bouillon, nootch and sugar coloring and boil the meat in it for 30 min, then press it and use it as the sheeps meat. It even looks like the real thing though it is soyikål! YUM❣️👏👍😊 🇳🇴

      Hi Lotta! I absolutely adore Norway, its breathtaking landscapes and the crisp fresh air is so reenergizing! I have actually seen this recipe and I was going to make it but I couldn't find soya chunks and didn't have the equipment to make my own seitan so I have decided to make Kjøttkaker instead but I sooooooo making fårikål this winter!

      Just remember not to brown your butter/flour past a beautiful caramel color, you don’t want it to go bitter. For more color, we usually add a little black food coloring (sugar coloring). I just love adding the vegan cream too, it is amazing stuff, so much better than real cream! If we have any, we sometimes also add redcurrant jelly, it is sout/sweet and gives a great umami flavor to your brown sauce. YUM❣️If you don’t have recurrant jelly, you can use a little lingonberry jelly too, as long as it is more sweet than bitter. All the best from 🇳🇴

    Avocado quesadillas with sautéed mushrooms & butternut squash /vegan ranch dressing ur liking... parsley for garnish on top
    Assemble as u like place in pan take out when ready enjoy 😉

      @@ChefJana I made these meatballs yesterday and they are, without doubt, the most successful meatballs I have ever made with vegan ground round. The gravy was also excellent. The only substitute I made was Marmite instead of Veggie Boullion. Delicious and very savoury.

      Potassium Broth
      4/Organic Potatoes 🥔
      3/ Peeled Organic Carrots 🥕
      4/Organic Celery 🍃 Stalks, Chopped
      Bunch of Parsley 🌱
      4/ Quarts Water 💦
      Peel the Potatoes and place the potatoe peelings , carrots, celery in a large pot of water. Bring to a boil reduce heat , and simmer for 30 minutes. Add parsley and simmer for another 5/ minutes
      Cool and Strain the finished Potassium Broth into glass containers, refrigerate. Good for 4/ days. Also freezes well.
      Note: Add 1 TBL of Coconut 🥥 Milk to each cup of broth 😋
      Broth is Loaded with Minerals that will assimilate into Your body quickly 👍
      Note: The Vege’s can be used in compost.
      Note: If You want reheat the 🥔 potatoes with coconut oil...let cool and place the potatoes in the refrigerator until cold...the potatoes are now a resistance starch which will add in digestion and elimination. 😊

      I am not chef Jana, just a Norwegian subscriber... I would sure try that, if I were you. I would add a couple of flax eggs though, to be sure. The «unmeat-mince» she is using, has a binder in it, so it is already shapeable, you don’t need flour, but flour is a common thing to add to kjøttkaker to bind and stretch the minced meat it is usually made with, so she has veganized a common recipe.
