I have made these 3 times now and each time, I have made sure to follow the recipe to a T, and didn't mAKE any substitutions. But my dough looks and feels very dry. Once it's out of the fridge, it falls apart and doesn't stick together! What steps have you skipped in posting this video? There is something you're not telling us!
I use Ghee instead of butter and do not put it in the refrigerator. I put it in a cool place for 5 hours. If is not sticky, you can add a little white egg.
By looking at the comments, many want to try or have tried changing the recipe to subsitute butter for something else, but unfortunately this recipe (much like many other Assyrian baked goods) must be unchanged otherwise you will end up with a completly different dish or will not turn out the same way as shown in videos or as described in written recipes.
the right recipe is with rose water and a little cooking oil and saffron. it should neither have cardamom in it nor look like that. you are also using the wrong baking sheet. had I watched the whole video first, I would never have wasted my ingredients on your made-up disaster recipe because I'm a chef
