I really enjoy your videos, well done! One quick question: what is the reason for using both fresh and dried chilis in the rempah? How would it affect the taste if we were to use only dried chili or only fresh chili? Thanks in advance for your reply.
Thank you so much!
For most Hari Raya spreads, I do love mixing both type of chillies together for several reasons. 1) fresh red chilli has a subtle taste, by using it alone, itd be...yep, subtle. No 'uumpf' to the cooking. 2) adding a few dried chillies, will elevate the sweetness and the spiciness of the food but to a minimal so that both young and old could enjoy the spread! Also, fresh chillies, give that pop of colour to your food! I hope this helps..phew 😅
