My favorite fan theory on Gohans potential: Gohans power comes from the concept of demon ki. (aka "kai ki" as kais are of the demon realm) Goku= Angel, Vegeta= Destroyer, Gohan= Kai. So with this in mind, apply the ki as you do god ki for goku/vegeta. "Ultimate" is Ssj (demon ki) just like ssb is ssj (god ki). Beast is SSJ 2 demon ki. (Ultimate could be "base" and beast= ssj (demon ki) but hair designs indicate the former) Elder guru simply unlocked gohans mortal potential. Elder kai unlocked demon/kai ki for Gohan, and cell max breaks Gohans restraint on himself as cell did originally. The factual explanation: Gohan has actually been training on his own as mentioned on a few occasions but his massive potential comes from the saiyan nature being amplified by intense human emotion. Both mystic and beast are exclusive manifestations of this. On the surface its easy to see where the asspull feel comes from but gohans lack of training has always been used to avoid stealing spotlight from everyones favorite goku. It was intended to make his power unreliable, not unbelievable but thankfully Gohan has been let off the leash just as Vegeta has.
