      dude, you continue to surprise. I imagine most people would do a collaboration and be done, but to see you comment on a completely unrelated video to your own, you sir have my respect. I really don't know where you find the time. I am tracking that this was prior to your video, but in fairness I only found Alex's channel after watching the meat-tenderizer video. It's awesome that you'd go out of your way to send out the great vibes.

    Yes! Alex, I used to work for a heat-treater. Most folks do not understand the importance of cortect temperature in forging steel.

      I think the blade wasn't evenly heated. You can se that the cutting part wasn't red

      D-MMA I can. The blades edge had cooled down too much when Alex quenched as you can see by the dull red gray color. You need to go straight from the fire to the oil no hesitation or mucking around

    You are fearless. I wanted to thank you for your classic omelet series. I have seen many videos of this from Julia Child to Jacque Pepin and never tried to make one. Showing all your mistakes finally inspired me to try it. It is now my favorite way to eat eggs. I suppose your next challenge might be Japanese Omurice. I have seen videos of the classic omelet served over a dome of fried rice with gravy. Maybe you can use your new chefs knife to split the omelet over the rice when served before the customer.

    what i like about this video is that it really shows how well the train infrastructure in france is, the simple fact that you're able to go from paris to nantes and back in one day (around 500 miles) amazes me. Anyways great video.

      Erik Rosas try doing that distance in the USA, 1 no trains to speak of, 2 you use the bus, 24 hrs at least of disgust, low life riders and possible police raids looking for drugs.

    As a knife enthusiast, collector, maker, and as someone who simply loves to cook; I tip my hat to you good sir. Job well done. I love your content and although I haven't been watching for a long time, I am definitely someone who will be looking forward to more videos like this one. Chefs that make their tools have a better appreciation for the craftsmanship. That knife will be a tool for life.

    This is very fun, I travelled to New Zealand and we took a road trip between the two islands and after going to Christchurch we saw an ad to forge your own blade at an old farm. It was so much fun, we did everything ourselves. From the inital heating of the metal to the forging and the polishing of the blade of the end product also adding a wooden handle. The most fun i've had on a trip in a long time!

    Do you like...have a camera crew that goes with you? Or are you as outstanding a director/producer/editor as you are a cook? Seriously how did you get the all angle slomo shots of the hammering without shots of other equipment in the background and do all the hammering at the same time? I am in awe at your filming skills 🤤

      groovypullet Watch the shots. Some of the time, you can see both his hands and the image is stable; those are tripod shots or otherwise stabilized camera shots. When the image is dynamic, he's only using one hand; he's using a selfie stick/monopod for those.

    I grew up in Pittsburgh PA. Working in a specialty steel plant was part of growing up. The various machines are fun but hard work. How about the smell that gets in your clothes and up your nose. I love your video and the memories it brought back. Thank you

    This youtube video was Art, absolutely beautiful directing and soundtracking - every video is great but this one particularly stands out as masterful. The slow-mo footage was a great addition and the sound engineering to bring out the focus of what you are filming was subtle and powerful. Fantastic.

      Jean Duchemin I’ve been to France and most of the people I spoke to in English (because I didn’t speak French) answered me in French. So, they knew exactly what I was asking for and that I didn’t speak French, but still chose to answer in French.

      So you come to France without speaking French, and you say that locals are arrogant because they could understand you (because they probably did learn some English, or at least made an effort to understand you) but they replied in French probably because they couldn't do otherwise ?       Does anyone else have a pet peeve about people calling pattern welded steel Damascus? Damascus is a historical steel which we don't know how it was made and pattern welding is a modern technique to imitate how it looks.

    I truly understand your fascination. There are a few knife making guides here in Germany and I had the pleasure to forge a chef knife once myself, only I made a dasmascus blade.
    Funnily though, I rarely use it, because after all, I suck so badly at making a GOOD blade in one forging class, that even a cheap blade from Zwilling of Wüsthof beats my knife.
    Nevertheless it is such a great experience and pleasure to simply have your own, forged blade in the kitchen.

      This was a big shock for me returning to America after living in Australia for 2 years. All the plates and cups are HUGE in America (probably why we are such a fat country :x)

      As someone who knows that feeling quite well, I think It was very brave and generous of them to converse in English so that more people could understand the video without the need for subtitles.

    Every time you upload a new video, i pray that you got the automatic subtitles right (setting them on english). Sadely, lately they have the wrong langage on most of you videos, making them unaccessible for hearing impaired people. (And its incredibly easy to set them right) Pity, liked your contents. This is the last time i will complain. Bye

      So many of my videos have properly written subtitles dude ! All the community is helping on that. Automatic subtitles can't work tho, as my accent is sliiiiiiiiiiighlty too thick.

      But you know, even with your thick accent, cant hurt to put automatic english it will always be better than automatic french or dutch or some strange setting i've seen !

      Doesn't youtube automatically detect the language for automatic subtitles ? I don't know, it would seem logical to me..

      you can change that btw. just click on automatic translation and choose a language ... there you go

    A spectacular experience!!! Two masters of their respective crafts are helping each other learn and to create. I was blown away when the newly forged knife slit through the paper without disturbing the entire page. Tout était incroyable ❤️❤️❤️❤️🔪
