How to Make a No Bake Pumpkin Cheesecake

- I’m always stressing about the Thanksgiving menu, and my plan is to always make as much ahead as possible! I decided to share the best no-bake cheesecake recipe because it checks so many boxes: delicious, fall flavors, show stopper, AND can be made two days ahead of time. This recipe is SO easy, and in this tutorial I’ll show you how I created this low-stress Thanksgiving dessert!
Recipe:
Crust:
2 cups graham cracker crumbs
½ tsp cinnamon
6 Tablespoons melted butter
¼ cup brown sugar
Cheesecake Filling:
2/3 cups heavy whipping cream
15 oz can pumpkin filling (about 2 cups)
Three 8oz blocks of softened cream cheese
1 cup powdered sugar
½ cup brown sugar
1 Tablespoon Pumpkin Pie spice
2 tsp. vanilla extract
Instructions:
Crust:
Stir all crust ingredients together and pack down into a 9 or 10 inch springform pan tightly. You can use your fingers or the bottom of a measuring cup.
Freeze crust for approximately 20 minutes.
Filling:
1.Whip the heavy whipping cream until stiff peaks arise (about 4 minutes) and set aside.
2. Beat the cream cheese until smooth.
3. Add pumpkin and both sugars to cream cheese and beat until smooth.
4. Add in pumpkin pie spice and vanilla and mix until combined.
5. Using a rubber spatula, fold in the whipped cream. Combine slowly so the whip cream doesn’t lose air.
6. Spread filling into frozen crust, cover with saran wrap/foil.
7. Refrigerate overnight.
8. When ready to serve, trace a knife around the outer edge of pan to loosen and then unclamp the springform pan.
9. Serve with whip cream and enjoy!
