Yes there is this superstition in China but each city or even each family has its own version. For example in my city, when you sneeze, we would say "oh someone is missing you" but if you sneeze again in a short time, that's when we say " haha someone is scolding you". Sneezing even more? You caught a cold 🤣🤣🤣🤣

Sichuan cuisine is my personal favourite of the great Chinese cuisines for being so fragrant, spicy and invigorating - a bit of chilli sweat is good for you as they say but I will say this, even in the general Chinese community, it isn't very popular I have Cantonese friends who will not touch a Sichuan restaurant even I am the one paying the bill. This is made further true by way of my location in Melbourne, I live close to Box Hill which has more Chinese cuisine restaurants that you can count and yet only 4 to 5 places would be Sichuan.
Sichuan food is usually heavily flavored, especially like very salty, oily and spicy, this fits a lot of westerners' tongue. But for a lot of people from Southeastern China this is not something they would appreciate, I am from Zhejiang and my entire family love steamed food and sweat food, but no spicy tolerance and hate super salty and oily (but I am different).
Fuiyoh! That looks delicious! As a European I am a bit sceptical about chopping the chicken into bites with the bones in. I would be too afraid of bone shards to dig in like I am used to. But I bet the bone marrow gives it a deeper flavour compared to using deboned chicken.
when we chop the chiken with the bone in it we don't chope it up at the middle of the bone, we aim for the joints, so that the bones won't get broken and even if we missed the perfect aim a bit only the soft tissue on the joint will be broken (which people eat all the time in fried chicken). But we do break the bones for bigger animals like cows, pigs, lambs ext. because the bones are biger and are wraped in more meat it very unlikly for it to fracture into small pieces. Like how you can use a screw driver to make a tiny hole at the bottom of a ceremic plate without fracture it if you do it under water.
I’ll never not be amazed at how you just whack up the chicken. In western cooking, we separate the different cuts of meat, and mostly we remove the bones. In China, you just chop the chicken. What cut? Chop the chicken. How do you de-bone it? CHOP THE CHICKEN. I’m looking forward to a beef recipe where you prepare the beef by just going full Hulk Mode on a live cow with your cleaver.
@@crabtrap there’s a big difference between cooking bone-in thighs and chopping up an entire chicken, bones and all, into little chunks and serving it all in a stir fry. Come on, man.

most bones don't 'splinter' if chopped when raw. so any fear of that should not be a concern

云吞的肉好像不能料酒腌,不然做出来有酒味
传统的去腥四件套,料酒,姜蒜葱。现代做法也可以用胡椒。炒肉的话就先切成肉丝然后,老抽生抽料酒姜蒜胡椒腌个半个多小时。
煮菜炖菜就先切成肉块然后放料酒姜葱焯水去除浮沫,然后捞出来冲洗一下换水。
