  • It's so easy and fun to make your own jam. Blueberry jam is one of my favorites!
This recipe makes 5 ½ x half pint jars - 5 to store or give as gifts and ½ for you to eat right away.
    Ingredients:
4 cups blueberries, crushed* (about 6 cups whole berries)
    3 tbsp lemon juice
    4 ½ tbsp classic pectin
    3 cups sugar
    * to crush blueberries, place in a single layer in the bottom of your pan and crush with a potato masher.
    Equipment:
    8 qt. pan for jam
Smaller pan for extra hot water
Large pan/stockpot for canning - I use a 21 qt. canner that has a jar rack as well.
    6 half pint mason jars
    Funnel
    Jar-lifting tongs
    Ladle
    Magnetic lid lifter or tongs
    Buy equipment you need here:
Waterbath Canner Starter Set - amzn.to/2ROxZNL
    Half Pint (8oz) Jars - amzn.to/2wNnsuV
    Ball Classic Pectin - amzn.to/34KP2p2
    Ladle - amzn.to/3bkhMHB
    - wash jars and lids with hot and soapy water and rinse well.
    - to sterilize jars, place jars in canner with just simmering water. Leave the jars in there until ready to use.
    - warm lids (do not boil) in smaller pan.
    - in 8 qt. pan, mix blueberries and lemon juice. Gradually stir in pectin.
    - bring mixture to a boil on high heat, stirring constantly.
    - add sugar all at once and stir to dissolve. Bring to a hard boil (that can't be stirred down) and then boil for 1 minute.
    - remove from heat and ladle into hot jars. Fill to about ¼ inch from the top.
    - make sure there's no jam on the rim of the jars that could affect the seal. Clean with a damp cloth.
    - place lids on top of jars and screw on bands until finger tight.
    - place jars in canner and lower into water. Make sure there's at least 2 inches of water over the top of the jars. Bring water to a boil and process jars for 10 min. Use the following chart to adjust water canning times for different altitudes:
    Altitude (feet) Increase processing time
    1001 - 3000 5 minutes
    3001 - 6000 10 minutes
    6001 - 8000 15 minutes
    8001 - 10000 20 minutes
    - turn off heat, remove lid and allow jars to sit for 5 min.
    - remove jars from water and place on a towel for at least 12 hrs. During this time you'll hear each of the lids pop as they seal.
    - check the jars have sealed properly - they shouldn't move up and down when you press in the middle of the lid. If a jar hasn't sealed, you can refrigerate it and eat it or you can process the jar again using a new lid.
    - keep processed jars in a cool, dry and dark place. They will last for about 1 year.

I like your tip about making only small batches. I made strawberry and blueberry today and they haven't set. But I realized they are double what you got. Let's see they are still cooling down now. I will follow your ratio of 4 cups fruit/ 3 cups sugar, not as sweet as the book/box recipes. Your a great instructor!

Just made some of this today! It turned out perfectly. I was a little lazy and didn't measure the squished berries. I just threw in 6 cups of blueberries into the pan (after washing of course) and squished them. It turned out to be like 5 & 3/4 jars of jam 👍🏻. I tasted it and it tastes great! Thanks for the recipe and video!

My hubby came to me this AM complaining how expensive jelly and jams are nowadays! So, I told him that I can make some. It has been 30+ years since I've canned anything. I loved your presentation. You have excellent instructions & calming voice. Oh, now I have to put an APB on my canning supplies!!!!!

Thank you so much for your quick and thorough response to my inquire! Just so I don't misrepresent anything, this was not my personal crop, I was just giving a guideline for the freshness of berries. ( I wish I had that kind of green thumb ) LOL Our life is quite hectic currently, but we should be able to try our hand at this in the next couple of weeks. I will absolutely report back the results! I am dreaming of fresh blueberry jam!

It does set without the additives, it just takes time. All you need to add is a little water and sugar, once the jars are property sealed they are preserved. I have some in my pantry from 3 years ago. If you want to properly preserve things in Mason or ball jars you don't want to tighten the rims down at all until the lids have popped and sucked down. After that is when you tighten down on the rim. Right after you add your hot jam or preserves to the jar is when you put the lid on and rim on lightly and allow them to cool on the counter until the air inside creates suction and pulls the lid down and makes a popping sound. Then tighten the rim and you're good to go. There is no need to heat them in water after filling.

For you poor people who just want to know how to make delicious jam, let me explain what is going on in this comment section. BTS is a South Korean group that produces music. They (as you can obviously see) have a worldwide fanbase. Two of the members' names are Rap Monster (stage name) and Jimin. In a video, they were speaking English (Rap Monster is the only one who speaks fluently) and he told Jimin that he had no jams. I'm still not exactly sure what he meant by that, but it was really funny and the whole fanbase thinks so. This is why we are here, in your comment section, trying to make jams for Jimin. I apologize for the confusion (:

jaemi is the korean word for fun, abbriviated to je(a)m
so when hoseok said 'your very no fun' rapmonster replied mixing two languages and saying 'jimin you got no jams' (jimin your not fun)

Well my wife has been into BTS for probably a year now. I'm don't really like any pop music though so I'm not up to speed on anything they do. Anyway, we moved into our new house not too terribly long ago and we have blueberry bushes in the from yard and I decided I was going to make blueberry jam. That's how I made it here. Then I find all this BTS stuff, and I guess I'm obligated to share it with my wife lol

Great clip. I like watching how other people do their canning. The only thing I would add would be to cover your jar as they cool. After years of canning I have seen all types of jar fail in the first 15 minutes of the cool down. Although a water bath is cooler than pressure cooking other goods, it's a good practice for all canning. my guess is you also do the same. I didn't understand the small batch. Of course like now when my cherry trees, and peach trees start producing large numbers are the only way to go. Thanks

My husband and I have recently discovered canning! We are enjoying the entire process and has been quite an economical pursuit. We have several pints of canned blueberries in medium simple syrup from this years crop We didn't have the time to make jam at the time. Would we be able to use these blueberries to make your Jam recipe? If so, would you be kind enough to provide a guide as to the sugar adjustment? Thank you for the video!

    • @Mrsgooses
      @Mrsgooses  10 років тому +1

Louise Rymdeko Hi Louise. Thanks for watching my video! It must be amazing to have such a great crop of blueberries :) I've never tried making jam from canned fruit. If I was going to try it, I would treat it like a no-sugar jam and use the no-sugar needed pectin. The Ball pectin calculator www.freshpreserving.com/tools/pectin-calculator# is great to get the right ratios of everything. I would probably go with the low-sugar option as I think it would give a more jammy flavor. I would drain the blueberries really well...I'm sure the syrup would be lovely to use in other things, like fresh lemonade! I'd then crush them and measure the amount of blueberries and go from there. Maybe try a small amount first and see if you like the result. You can definitely can the jam as you would normally!
I hope that helps and if you give it a try, I'd love to hear how it goes :)

May I know that what kind of lemon juice that you have used? is it fresh lemon juice?

  • @rowdeo8968
    @rowdeo8968 5 років тому

American Test Kitchen says to use commercial lemon not fresh lemon in a bottle for safety reasons because fresh lemons have different levels of acidity whereas bottled lemon juice is guaranteed. Also FDA says you do not need to boil the jars before filled but use enough water to cover jars you are canning one inch. You can use natural pectin by adding one granny smith apple grated/.

    • @genskitchenmagic2957
      @genskitchenmagic2957 2 роки тому

You aren’t using lemon to add a certain kevel of acidity in this recipe, it is only used to help set the pectin, so using fresh juice is fine.

You should have wiped the rim of the jars before placing the tops on them. If dirty, the jar won't seal. I am glad it seems your did seal. Having the funnel that goes of the rim helps, I guess.

+Joyce T Yes! Very good point. I always wipe the rims if there's any jam on them. The jar I used as an example was clean, so I didn't do that in the video - sorry! It's definitely a step in the instructions, but I'll try to make sure I mention it in the video the next time I make some jam :) Thanks!
