For snacking I love Opals with thin slices of aged cheddar. For baking a combo of Elstar and King David for the tart/sweet effects and complimentary textures.
GingerGolds. They're usually in season the end of summer/very beginning of fall. I remember when I first tried one, it was like my perfect apple. Crisp with firm flesh and the right balance of tart and sweet. Sadly it's also one of those apples where, unless you're lucky, (at least in my area) they don't always taste the same. That first batch was amazing but I haven't been able to get a similar one since. Granny Smiths are a close second for me but now I've learned it *really* depends on where they come from. A lot of the ones that get imported to the area I moved to, taste like nothing. I like honey crisp, but they're *VERY* expensive here so I don't get them unless they're on quick sale.
Crimson Crisp. Hands down the best apple I’ve ever had in my life! And I grew up in apple country in New York State. Found it in a farmer’s market in Richmond and I keep going back for more! Crispest I’ve ever had and a perfect balance between tart and sweet. I’m in love.
Royal Gala apples have a grainy texture I don't like for my apples. Standard Golden delicious apple with peanut butter, granny Smith apples for snacking and pink ladies are also a fave. I eat them with cheddar cheese or crackers or sometimes baked brie

A delicious apple (also known as Standard Delicious, Old-Fashioned Delicious, Heritage Delicious, or Hawkeye) is my favorite type of apple. They are crisp and have a great flavor that is amazingly well balanced.
Red Delicious apples were great in the beginning but then the desire to have longer shelf life led to the apple changing while it was still being sold under the same name. So now Red Delicious apples lack the taste of the original but they are great for shipping across the country.

Cosmic Crisp apples in Washington state are amazing. Always crisp. Always. Not quite as flavorful as a Fuji apple, but seriously juicy.
