    May I ask.. Is your mooncake skin getting too much sweat (oily) after 2 days.. It is not like the one sold at market, but so so oily and a bit sticky.. Do your mooncake also same?

      I usually put the mooncakes in the fridge for storage the next day, it is not very oily.

      I have tried making other flavor paste with lotus seed. You may try to adapt from this recipe: mykitchen101en.com/lotus-seeds-mooncake-paste-recipe-white-lotus-paste/
      Actually mung bean is a good base for other flavor paste.

      You may try freezing it, return to room temperature before using.

    If I want to make this paste ahead, how long can I store it? And how should I store it? At room temperature, in the fridge or in the freezer?

      Put paste in container and freeze it. Return frozen paste to room temperature before using. I usually finished within 2 weeks.

    Hi i follow this recipe but my paste is too soft and it sticks to my hands while i try to shape it. May i know how to save the paste and make it stiffer?

      For mooncake paste, you need to cook until dry, the cooking time is just for reference, you need to check the consistency of the paste. If it is still very soft when cooled down, you may cook again until drier.

      It yields about 560 g, how many mooncake will depend on the size of your mooncake.
