May I ask.. Is your mooncake skin getting too much sweat (oily) after 2 days.. It is not like the one sold at market, but so so oily and a bit sticky.. Do your mooncake also same?
I usually put the mooncakes in the fridge for storage the next day, it is not very oily.

Put paste in container and freeze it. Return frozen paste to room temperature before using. I usually finished within 2 weeks.

For mooncake paste, you need to cook until dry, the cooking time is just for reference, you need to check the consistency of the paste. If it is still very soft when cooled down, you may cook again until drier.
