Assuming you are handling the gaiwan with your right hand, you pour water near the edge of the leaves on the "3oclock position". When you pour out the tea, it was exit from the leaves at the 9oclock position. That way, the water always goes through the leaves in a single direction. That's what I was told anyways. Honestly, I think your steep time is more important than how you should pour water, but that's just my 2 cents. Cheers!
