  • Recipe for Cake "Fruit Baskets":
    Shortcrust Pastry (for about 18 pieces):
    ✦ 200 g butter or margarine
    ✦ 150 g sugar
    ✦ 2 eggs
    ✦ Grated zest of 1 lemon
    ✦ 400 g all-purpose flour
    ✦ 200 g roasted ground hazelnuts
    Preparation:
    Mix softened butter, sugar, eggs, and lemon zest with a fork. Add flour and ground hazelnuts, then knead the dough until combined. Wrap in plastic wrap and refrigerate for one hour.
    Grease the tart pans with softened butter. Roll out the dough to a thickness of 3 mm. Use a glass or a round cutter slightly larger than the tart pans to cut circles from the dough. Place the dough in the tart pans and gently press into the grooves with your fingers. Prick the bottom with a fork and bake in a preheated oven at 170°C for about 20 minutes.
    Cream:
    ✦ 4 egg yolks
    ✦ 150 g sugar
    ✦ 80 g cornstarch
    ✦ 600 ml milk
    ✦ 1 tablespoon vanilla extract
    ✦ 250 ml heavy cream
    Preparation:
    Mix egg yolks, sugar, and cornstarch well with a little milk, then cook in the remaining milk with vanilla extract. Cook, stirring constantly with a whisk. Remove from heat when thickened and cover with plastic wrap. Add whipped cream to the cooled mixture and mix manually.
    Fill each tart shell with cream using a piping bag.
    Additionally:
    ✦ Fruit of choice (strawberries, raspberries, blueberries, peaches)
    ✦ 1 cake glaze
    Decoration:
    Arrange seasonal fruit on the cream. Prepare the cake glaze according to the package instructions and brush the fruit with it. Chill before serving.
