Depends on what you're playing. For the most part, traditional Chinese is still written using the numbers system called Numbered Musical Notation (literally translated into Simplified Notation). In this type of notation, the key is established at the top of the piece and the number correspond with each note according to their order in the scale. For example, in C Major, 1=C, 2=D, 3=E etc.

I play with western music instruments, BUT I've seen the music sheets of a friend who plays the guzheng and she tells me that they are based on numbers 1-7, where each number corresponds to a letter in western music. (1 = C, 2 = D, etc) The big part I'm not sure about is if the format has changed over time or it has had little to no change (like western music). That is why I say "I guess".
