- I had a leftover piece of belly sitting in the fridge.. so this is what happened
Dry brine for 24 hours in the fridge. Medium high indirect heat for about an hour and a half. Internal temp around 200⁰. Take off, cube and put in a covered dish with a sauce. Another hour and goodness.. Where's the greed, you say? The cubes were even better before I put them on the second time with the sauce.. Ah, it happens...
