Homemade Strawberry Ice Cream (With fresh strawberry 🍓+ without ice cream machine)

RECIPE FOR HOMEMADE STRAWBERRY ICE CREAM
Strawberry Ice Cream:**
Ingredients:
*For Strawberry Concentrate:*
- 600 g fresh strawberries
- 1/4 cup (50 g) sugar
- Pinch of salt
- 1 tsp lemon juice
*For Ice Cream Base:*
- 600 ml Amul fresh cream (thick cream) or heavy whipping cream
- 170 g condensed milk
- 1/2 tsp agar agar powder
- 2 tsp hot water
Method:
*1. Strawberry Concentrate:*
- Wash strawberries, remove white parts, and halve them.
- Blend into a smooth puree without water.
- Transfer to a pan, add lemon juice, sugar, and salt.
- Cook on medium flame until reduced by half and slightly thickened.
- Remove from heat and let it cool completely.
*2. Ice Cream Base:*
- If using Amul milk with 25% fat, refrigerate to obtain thick cream.
- Create an ice bath by combining ice and salt in a bowl.
- Whip the thick cream until stiff peaks form over the ice bath.
- Dissolve agar agar in hot water.
- Combine agar agar mix, condensed milk, and strawberry concentrate in the whipped cream.
- Whisk until well combined.
*3. Freezing:*
- Transfer the mixture to a container, add parchment paper on top, cover, and freeze for 6 hours or overnight.
*4. Serving:*
- Allow the ice cream to sit for 5 to 10 minutes before scooping.
Additional Tips:
- Adding lemon juice while cooking strawberries preserves a delightful hint of sourness.
- Using an ice bath aids in achieving quicker and fluffier whipped cream.
a perfect blend of creamy goodness and natural fruity sweetness!
This ice cream will surely have some ice Cristal in it as it has fresh strawberry in which strawberry has more water but it has most delicious creamy and strong strawberry flavour unlike the store bought version which has artificial strawberry taste.
