As a translator and student of Classical Japanese stories myself, I very much appreciate your work, good sir. It was the samurai and stories like these that initially got me interested in Japanese history and ancient literature. Though my real love is stories from the Kamakura and earlier, the Sengoku Period has a dramatic flair and grandeur that is second to none. Bravo sir, and if you ever have questions about really old Japanese words and phrases, I'd be happy to help.

I’d include Kato Kiyomasa during the Siege of Ulsan to this (one of the last Japanese victories of the Imjin War), as it got desperate enough that he was on the verge of starving.
Kuki Yoshitaka at Angolpo probably counts too-he lost, but he was one of only two samurai commanders to have actually given Admiral Yi a serious challenge (the other is Shimazu Yoshihiro), and was probably the only guy who fought him who didn’t get his flagship wrecked (Wakizaka Yasuharu had his flagship sunk at Hansando, the Murakami/Kurushima brothers had their flagships sunk AND themselves killed in separate engagements, and Todo Takatora lost his flagships to Yi repeatedly as well as being injured himself at Myeongnyang).

Takeda Generals last stand in Nagashino and the fall of Takeda with Katsuyori seppuku is heart breaking to hear as they are my favorite Samurai Clan in Sengoku period. Baba who is said to never received a single wound during his career end up dead at the end.
Nobunaga although he destroyed Takeda, must give him credit that his last stand is really impressive in Honnoji, instead of crying and pissing himself, he took out his bow and started to shoot at his Akechi enemies until he run out of arrows. He even decided to take his sword and spear but gave up and commit Seppuku instead.
My other favorite last stand is Sanada Nobushige (Yukimura), where he just fought so tired that he just gave up and let a simple enemy samurai to take his head.

What's ironic is that yamamoto kansuke didn't live long enough to see his strategy did work out at the end.

It's more like bad timing(?) But I see what you're talking about. It's a shame he wasn't alive to see the successful fruition of his strategy. He would have been very proud. However, I believe he's watching from Heaven, very pleased with the outcome.

Honestly, Sabaton could make an entire concept album just about various samurai last stands and general asskickery.
Also: Yoshitsugu :'( The Aoi taiga probably gives him the most badass death where he curses Hideaki before he dies. But he also gets a cool death scene in Sanada Maru. Hope the new Shogun will actually show Sekigahara, because they released his character photo and his design looks really good (well, really horrifying but in his case it's good).
Really wish they made Katsuyori a major character in a taiga. He's an interesting and tragic figure.

I know this is not really part of old Japanese history, but General Kuribayashi's last stand at Iwo Jima resonates with me. He came from a samurai lineage and fought the way his forebears did: forlorn but honourably defiant to the end.

Many brave Samurai are featured in this video but three are my favorites -
Yamamoto Kansuke's sacrifice at the 4th Battle of Kawanakajima is one yet there was one opinion which I would like to remark here...
I believe that Kenshin had a keen instinct into sensing the movements of his nemesis but there is also the fact that due to being on Mt. Saijo, he had a good view of Kaizu Castle and if the Takeda Army were making their meals on the eve of executing the plan...Then it is safe to say that their cooking smoke was seen by the Dragon. In a sense, this was something which I believe the Takeda general hadn't taken into account but this is just my own opinion.
The Second favorite is Toyohisa Shimazu since not only did he gave his uncle precious time he needed to escape but he demonstrated the ferocity of the Shimazu Devils against their counterparts, the Red Devils of the Ii Clan. Plus, he would had probably smirked if he had long enough to see one of his men firing the very bullet which mortally wounded Naomasa Ii.
And lastly, there is Shinsengumi commander Toshizo Hijikata.
At the time of his last stand, the Shinsengumi were so feared among the Imperial forces that encountering one of the Wolves of Mibu is enough to invoke fear and thus, many Imperial officers would bring in more men to kill them, even if it is a single man. Hijikata remained true to his personal principles and died as both a samurai and Shinsengumi to the end.

    Iba Hachiro (1844-1869)
His parents' family was a prestigious dojo in Edo
Active as a ranger on the Tokugawa side.
During the Battle of Hakone, he was severely wounded, amputating his left hand while engaging the new government forces.
Later, he went to Hokkaido and joined Takeaki Enomoto.
After becoming a one-armed man, he continued to fight as the leader of the rangers, but was fatally wounded by a bullet to the chest and finally committed suicide with morphine.

For me the greatest last stand is of the great red hero Sanada (Nobushige) Yukimura. His last words "Who will dare take my head?"

So.... I don't know if it can be be called a last stand, but during hitotoribashi, Date clan's fight against combined forces of Satake Yoshishige and his allies is pretty heroic as well. They seemingly thought that battle to be their last one and many years later during edo era Masamune even said that the biggest challenge he faced was hitotoribashi.

Some other last stands worth a mention, particularly in the Western part of Japan.
Matsunaga Hisahide blowing himself up at Shigisan Castle against Oda Nobunaga's retaliation for his defection
Amago Katsuhisa and Yamanaka Shikanosuke at Kozuki Castle holding out against the Mori after being denied Oda reinforcement
Kikkawa Tsuneie at Tottori Castle against the Oda invasion
Bessho Nagaharu at Miki Castle against the Oda invasion
Shimizu Muneharu at Takamatsu Castle against the Oda invasion(honestly these last three could all be rolled into one as Mori allies/retainers who fought to the death in Hideyoshi's Chugoku campaign)
The Ryuzoji Shitenoh at Okitanawate after Takanobu is killed by Shimazu surprise ambush
Takahashi Joun at Iwaya Castle against the invading Shimazu forces
Sagara Yoshihi vs. Kai Soun in the Shimazu invasion of Higo Province. Not so much a last stand in the traditional sense, but Yoshihi effectively allowing his oath friend Soun's army to kill him in battle while at the same time hindering the Shimazu's momentum northward(the Shimazu had forced the Sagara into vassalage and sent them out as their vanguard army.)

I remember reading that Sakon gave such a strong resistance that people who survived fighting him were left suffering from a massive case of PTSD from having faced him in battle. Not sure where I've read or if it's true at all.
Also Yoshiteru Ashikaga is incredibly badass to have went out the way he did.

I don’t know, I think you should discuss The Rebellion at Shimabara. The castle was under repairs or unfinished I can’t remember what but it was defended mostly by peasant farmers. With the aid of Some Samurai, Ashigaru , and Ronin . The attackers a fully trained and professional army that ended up getting even more reinforcements after the initial force couldn’t subdue the rebellion. The rebels lasted for what 3 to 4 months not bad for a bunch of untrained farmers.
I always thought that this battle was played down in history because it was a testament to the fighting spirit of the downtrodden peasants.

Btw Saigo Takamori didn't commit seppuku he was shot to death and this can be read if you dig slightly deeper into sources. Later it was romanticized as him killing himself in traditional manner instead of the less heroic death as a victim of imperial firearms.
