1) If you're using whipped cream frosting, don't store it for too long. Maybe 1 day before your order is fine. 2) Yes, Put a cling wrap to the sponges and cut off moisture. You can either freeze it (if using after a week or two) or refrigerate it (if you're using after a day) as per your need. It'll not be spoiled.

Use weighing scale for precise measurements. If you don't have then 3/4 is between 1/2 and 1. Same way 2/3 is between 1/2 and 3/4
