Thank you I was placed in a Mexican foster home. Mom would cook this at least once a week. I am currently writing down all of my favorite foods and recipes for my children. I was missing the cheese element. BTW I live in Alaska..... I went to my Safeway and asked to speak to anyone who knew about Mexican cheeses...no help. Thanks to you I can now finish this special recipe.
instead of using the knorr pollo flavor, I like to use the knorr pollo y tomate flavor....same thing,, it just adds mas sabor tomate…...so so good....I live in Tennessee, we have very little Mexican restaurants, like, the real Mexican food....so I make a lot...I lived in mexico 20 years ago for about a year...I am gabacha, but was married to a mexicano from manuel doblado , gto…..I miss mexico soooo bad, this reminds me of my suegra, when she was teaching me to speak Spanish, and cook, and how to be a Mexicana......beautiful memories

Ah, childhood. My mom used to make Fideo---good stuff. Yes, you should buy some of those aprons you're abuela gets from T.J. and raffle them off!!!! Love them. I remember coming across the first tortilla video and the tons of flour and salt she used, now you'd think she was on the food network! LOL, yes she is still so humble.
i love how she blended everything because not only do kids hate finding onions in their food but she created a concentrated vegtable paste which tastes much better!!! genius!!!!!!

These are the best cooking videos! Thank you so much! I think (in the US at least) home cooking has really suffered because we don't live with our extended family anymore, so there's no one to teach us to cook. You can't learn this kind of cooking from a recipe or from fancy food shows with professionals. I want to cook like Sylvia's beautiful Abuela. Just watching her hands as she does things teaches me a lot. No hurried efficiency, but the lovely manner of a mother and grandmother preparing a meal for people she loves. Abuela always seems to say that these dishes are "simple", but for many of us there's a lot to learn -- including about taking time, hanging out in the kitchen, and having good vibes and a sense of humor! I've only made the Frijoles Charros so far, but I followed the video closely and they were delicious! I hope Abuela knows what a talented and charming person she is. Sylvia too, and the rest of the family, such sweet people you seem. You make me miss Mexico so much!

Abuelita reminds me of the way my Mom (RIP) used to cook. Never used any measurements per se, mostly by sight and touch and her food always turned out delicious. I love Abuelita's jab at "someone" here likes it with sour cream! I'm not crazy about sour cream either and the look on her face when her granddaughter tried to offer her a taste is priceless!

I really have to say i have found my channel for recipes. Man i have been trying to master many traditional Mexican recipes without overstepping my boundaries by asking people. Abuela is the answer to my prayers, what a great channel and i know this is and they are recipes from the heart and soul. So awesome ill be back and to watch many of your other videos. The very 1st time I saw this video, I immediately ran to FOOD 4 LESS and bought all the ingredients. Rushed home and made it... HOLY GUACAMOLE!! I was immediately 8 yrs old again.. this took me waaaaayy back!! It was going on 40 yrs that I had not had this delicious dish.. I thought it was hard to do, NO WAY!! Years ago, I pleaded with my Grandma to show me how she cooked her best, but she said Men Should Not Be Cooking and shooed me out of her kitchen, while SHE made it! I absolutely love fideos. There's nothing else that tastes quite like it. My mother made it simpler, no cheese, no crema, but I have to admit as a kid I didn't like it for some reason. As an adult I can't get enough of it. Thank your abuelita for sharing her recipe!

The very first time I made fideo I used to he blender as well to hide the onion, tomatoe and garlic. My problem was when I added double onion. .. the onion was so strong that I was tearing up while I ate it. Haha live and learn. Lots of love from Texas I will try it w sour cream next time.
she cuts her vegetables just like my grandma did. i learned from my mom this teqnique too, amazingly weve never been cut. but growing up i learned to use the cutting board and to use a chefs method. i love watching your abuelitas videos...i learn alot :-)

I miss my grandmother so so much, enjoy her while you have her, my granny passed over 10 years ago and not one day goes by that I don't think about her, not one. Give your granny a hug for me she is the cutest.
When my children were small, I used to blend up mild salsa for the fideos when I wanted to make it quick and easy. I remember watching my Mexican ex father-in-law make it, and he used chicken broth instead of water and pollo sabor. He didn't add any cheese or sour cream. He browned the fideos in butter. So that was how I learned to make it. This way I am sure is just as delicious though.
When i was in TJ a few years ago, I was served ranchero salsa at a well known cafe, i loved to put it on my breakfasts! Especially eggs, refried beans, & potatoes. No one would share how to make it, (i understand). Please do a video on how to make ranchero salsa- PRETTY PLEEEEEEEEEEZ?? Mucho gracias!!!

Yo nunca lo he hecho con el fideo quebrado, siempre con las madejas. Asi lo hacian en mi casa. Tambien le pongo cilantro en rama y a veces un chile jalapeno completo cuando se esta hirviendo. Voy a probar con el fideo quebrado a ver que tal. El chile a veces lo pongo, a veces no; pero el cilantro si es "a fuerzas". Es lo que le da el sabor que siempre he conocido... el de mi casa (la de mis padres). Muchas gracias. Saludos!
ironic. once again, ond a day i woke up miserable, after being up all night fretting and ulitimately, wallowing in the realization that i have NO family of my own, i see THIS video and once again, i am uplifted in spirit remembering a time when i was once someones daughter, ...granddaughter. Gracias abuela. you made my heart happy again...AND of course..my tummy hungry. PS tell her my chili rellenos came out muy mal, sigh....the cheese fell out, ..my peppers wouldnt stay with just a small opening after I had to use a skilit to burn off the skin. i needed the fire method. I've been a vegetarian for over 15 years, so I don't eat manteca or chicken bouillon. That being said, THIS LOOKS SO BOMB! I'll just substitute vegetable oil and vegetable broth. Mmmmmm, con unas tortillitas de maiz con mayonesa.... Saludos a ti y a tu abuelita! :)

question after it's done and it's all soupy ,how do you stop it from all the liquid dying up. it seems like the noodles obsorb all the liquid . any suggestions? thanks for the great recipe. Luv it
Victoria Navarro when you toast the noodles super toasty it prevents them from getting too fat and absorbing all the liquid. Some people add less noddle for more soupy consistency and some more noodles for a thicker. Hope that helps!

The very first time I made fideo I used to he blender as well to hide the onion, tomatoe and garlic. My problem was when I added double onion. .. the onion was so strong that I was tearing up while I ate it. Haha live and learn. Lots of love from Texas I will try it w sour cream next time.
she cuts her vegetables just like my grandma did. i learned from my mom this teqnique too, amazingly weve never been cut. but growing up i learned to use the cutting board and to use a chefs method. i love watching your abuelitas videos...i learn alot :-)

When my children were small, I used to blend up mild salsa for the fideos when I wanted to make it quick and easy. I remember watching my Mexican ex father-in-law make it, and he used chicken broth instead of water and pollo sabor. He didn't add any cheese or sour cream. He browned the fideos in butter. So that was how I learned to make it. This way I am sure is just as delicious though.
When i was in TJ a few years ago, I was served ranchero salsa at a well known cafe, i loved to put it on my breakfasts! Especially eggs, refried beans, & potatoes. No one would share how to make it, (i understand). Please do a video on how to make ranchero salsa- PRETTY PLEEEEEEEEEEZ?? Mucho gracias!!!

Yo nunca lo he hecho con el fideo quebrado, siempre con las madejas. Asi lo hacian en mi casa. Tambien le pongo cilantro en rama y a veces un chile jalapeno completo cuando se esta hirviendo. Voy a probar con el fideo quebrado a ver que tal. El chile a veces lo pongo, a veces no; pero el cilantro si es "a fuerzas". Es lo que le da el sabor que siempre he conocido... el de mi casa (la de mis padres).

ironic. once again, ond a day i woke up miserable, after being up all night fretting and ulitimately, wallowing in the realization that i have NO family of my own, i see THIS video and once again, i am uplifted in spirit remembering a time when i was once someones daughter, ...granddaughter. PS tell her my chili rellenos came out muy mal, sigh....the cheese fell out, ..my peppers wouldnt stay with just a small opening after I had to use a skilit to burn off the skin. i needed the fire method. I make my Fideo the same way except I use tomato paste. Same flavor, and definitely kid friendly with ham corn quesadillas. My nephews love it
I looked long and hard for this this Recipe no one in my family knew how to make this I remember my grandma making me this dish - when I was very young I loved it so much and I still do Thank you for giving me back part of my once young life I will teach all of my kids how to make this dish and show them them your video thank you once more

Victoria Navarro when you toast the noodles super toasty it prevents them from getting too fat and absorbing all the liquid. Some people add less noddle for more soupy consistency and some more noodles for a thicker. Hope that helps!
Although it absorbs the caldo if you heat it back up on the stove you will get the caldo back.
