Smashing ground beef too much makes it tough when cooking. Use a light hand when packaging or making burgers. Not so much a problem if you add stuff like bread crumbs and milk, etc. for making meatloaf, salisbury steak or meatballs as the bread/milk -- called a "panade" - which is a mixture of starch and liquid - so it doesn't always have to be milk (and sometimes egg) mixture helps to keep the cooked meat moist.
