Silicone mold for spheres with 24 cavities. Diameter of hemispheres: 3cm
INGREDIENTS:🥭
For the cheesecake base:🍪
10g coconut flakes
100g Graham crecer or other biscuits
60g melted unsalted butter
For the coconut cheesecake:🥥
180g cream cheese
5g gelatin + 30g water
50g powdered sugar
7g lemon juice
110g coconut puree (or cream)
130g heavy cream 33-35% fat
For the mango filling:🥭
170g mango puree
30g passion fruit puree
20g sugar
5g gelatin + 25g water
5g pectin + 10g sugar
pinch of citric acid
For the passion fruit balls:🍈
150g passion fruit puree
30g sugar
5g pectin + 20g sugar
3g gelatin + 15g water
pinch of citric acid
For the mango cheesecake balls:🥭
60g cream cheese
16g powdered sugar
2g gelatin + 10g water
3g lemon juice
36g mango puree
50g heavy cream 33-35 % fat
For the clear jelly:🎂
350g hot water
58g sugar
14g lemon juice
15g gelatin + 75g water
If you're not sure about the strength (bloom) of your gelatin, use 17g and 85g water.
