Yoffo idk if this is an accepted way to play the riff but... I lay my whole index finger (left hand) across the strings to mute it. Then i use my other 3 fingers (Middle, ring, and pinky) to play the notes. Makes sure to not put any pressure on the strings with your index finger, just a tad.

All GnR riffs are brilliant. The best for me are My Michelle, Coma and Don't Damn Me. Also a lot of Slash's other bands (Snakepit, SMKC, Velvet Revolver) have some great riffs like Slither (One of the best riffs of all time IMO), Let It Roll, Speed Parade, Shadow Life, Beneath The Savage Sun. Slash and Izzy really are badass guitarists.

I would recommend to split the video into riffs and licks. Many of them, like that John Meyer lick, has nothing to do with Pantera - Walk. That riff is killer, and i don't even listen to Pantera.
