    Boiling Raan process
    Raan - Approx 4 to 5kg minimum
    Green Chilies 250 gms
    Garlic 250 gms
    Ginger 225 gms
    Mix Garam Masala - 3 Tbsp
    Pathar ka phool-3 Tbsp
    Coriander seeds 2 Tbsp
    Saunf or Fennel seeds 2Tbsp
    Tej patta 15 to 20
    Salt
    For Raan Marination
    Tomato Sauce
    Red Food Colour
    For Rice 3 kg Rice Basmati
    800g Tomato puree
    1 Tsp Turmeric
    1 Tbsp Kashmiri Chilli powder
    1Tbsp Garam masala
    1Tsp Mix dhaniya saunf powder
    1Tsp Coriander powder
    2 Tbsp coconut powder dry
    200gm Tomato sauce
    Salt
    Garlic pastes 1 Tbsp
    Oil ½ Cup
    Ghee ¼ Cup
    4 to 5 Tez patta
    Mix garam masala 1Tbsp
    Onions 250 gms
    Garlic pastes 2 Tbsp
    Curd ½ Cup
    Tomato Puree Masala (Made above)
    Green chilies
    Fried Carrots
    Ghee for garnishing
    For Kofta
    Mutton or Chicken mince 600 gm
    Tandoori Masala powder 1 Tsp
    White pepper powder ½ Tsp
    Black pepper powder ½ Tsp
    Garam masala powder ½ tsp
    Ginger paste 1 Tsp
    Garlic pastes 2 Tsp
    Chaat Masala powder 1 Tsp
    Green chilli pastes 1 Tsp
    Coriander leaves chopped
    Shaan masala powder seekh- ½ Tsp
    Salt as per taste
    Kashmiri Chilli powder ½ Tsp
    For Final Garnishing
    Raisins
    Fried Potatoes (Add colour, salt and cornflour) Fry them till crisp.
    For Raan sauce
    Oil
    Butter
    ½ Tsp Zeera
    1 Tsp Garlic paste
    4 Tbsp Red chilli Sauce
    4 Tbsp Tomato sauce
    4 Tbsp Schezwan sauce
    1 Tsp Garam masala powder
    ½ White powder
    Salt as per taste
    Salad for garnishing
    Mayonnaise for serving
