I miss my old 98 Cinquecento:(
I fitted a switch to earth the cooling fan on manually (mine didn't have a temperature gauge) after i boiled the head. Retrofitted temp gauge etc from a seicento dead easy.

It should be the OEM spec one which opens at 87/88 degrees Celsius.
