He has created a beautiful and abundant kitchen garden, and most of the food he east now comes from just a few metres from his house. His story of being a chef to now also a fantastic gardener is very inspiring!

Had Gaz considered small Friday night dinners at his place? I live in Pennsylvania & would love to find a plant based chef in my neighborhood.
I love the last comment "turn your lawns into gardens" it's something I wish more people would realize. When a person has a grass lawn, yes it might look pretty, they don't realize they're growing an invasive species that really doesn't do anything except, sort of, look good. I can't wait to see who else and what else pops up on your channel!

I did that many years ago, hate lawnmowing! Unfortunately, the Council own the front verge but the homeowner has to mow it. Unable to mulch it out cos I live on a flood plain so it all floats away. But I do have apricot and almond trees planted there, which is something!
@@janlewis567Could you plant short native grasses and flowers on the front verge?
@@jwhite5396 Nice suggestion and I have tried that, around the fruit trees, but the grass/weeds thrived in the extreme dry/then too wet soil so I had to abandon it because the grass and weeds needed cutting all the time. Even comfrey and marigolds failed to thrive. I guess when a cyclone comes through and deposits two to three feet of water on you for many hours, it's a struggle!

Not all short grass is negative, here in the west of Ireland there are lots of birds that enjoy the short grass to find worms and grubs. Flocks of starlings and fieldfares come down and feed amongst others. Diversity is the key. A bit of everything in the garden or else you fall into the trap of trends and not the bigger picture. Different habitats for different species to thrive.
Huw, why not have some “Huw Gnome” figures made up so we can place them in our allotment???

Could be my words. Often I hear the phrase: "Such a garden must be a load of work!" But for me, gardening is never work- it´s always pure pleasure. And yeah, there´s nothing more satisfiying than own growed food coocked over a fire💜 I really feel deeply with you. Thanks for sharing your thoughts and thanks for beeing you🙏
‘Turn your lawns into farms’ - such good advice. We started doing just that last year, and it was so rewarding! After waiting a while, we have just obtained an allotment and look forward to expanding our growing capacity! Thanks again for your videos ❤

Im a lot older than yourself 😅 I've worked in kitchens for years and when you say you have worked 80 hours a week for however long or you have that one day off in 4 weeks, people look and say how is that possible when legally you can only work 45 / 48 hours a week. ( im in Ireland ). I remember sending my oldest son to a career advisor he was in 3rd level doing science and was thinking of becoming a chef, what was said to him chefs are number one job to get burned out that he had a lot of chef's over the years looking for new careers at 30 to 35 years of age. I love gardening and I'm getting into growing vegetables and fruits in a small space. Its so good getting out into it. I've even probably got into the garden every day since the weather has changed. A year ago i moved jobs and would never go back to working those hours again and my garden thought me a lot
Covid brought me closer to nature. I loved going out in the yard and getting my sunshine vitamins. It is very therapeutic. So is eating what you have growing.
I love gaz and his channel.esp watching him cook outside nd seeing his garden nd chickens.i can't wait to start my salad seeds as soon as th weather improves. He's an inspiration. I have his plants only kitchen book and I love it.
I can totally connect with his description of growing and cooking, self sufficiency and something deeper in gardening related work. Forward thinking, tradition, watching, recognizing, improving. Simply growing, expanding knowledge, fascinated by nature, eco-system, variety and importance of health. Both human and planet. Thanks for this beautiful documentation. I turned my entire front yard into a vegetable garden with flowers mingled in. I put a picket fence around it and live it! About chickens...What a lot of people do not understand about chickens is this. A chicken will only lay a set amount of eggs in its whole life. You can not do anything to change that number. You can put them in bright light in the winter months but all that will do is make them lay that set number of eggs sooner. I can not tell you how many people I talk to that say they are trying to get their chicken to lay more than one a day. They can only lay one a day. Plus different breeds lay more days than other breeds. Your garden is lovely ❤

This morning it is 2°F (-16°C). It can get depressing as a gardener. It was so nice to see this video!! Gaz has a warm and gentle way of inviting us into his beautiful hillside garden and the amazing videography really made me feel I was there. Thanks so much Huw, Sam, Gaz and team!

“Don’t think that there’s a diet that’s suitable for everyone out there”
Thank you! So many people try to say this diet or that diet will work for everyone. It’s just not true. Some people have a very specific diet related to their genetics and the people that came before them. For instance I’m Irish ancestry. I need meat, fish, dairy, cheese and lots of different kinds of vegetables, especially cold weather or overwintering crops.

I just moved to Ghana in west Africa to farm. You are welcome to come enjoy the warm weather and hang out in the farm with us. It’s a beautiful lush tropical paradise with a year round growing season. Lots of fresh organic non GMO healthy foods here.

And that's just it. City folk, and most country folk, are not in control of anything in their lives. They are completely dependent on someone else to provide and produce, food, shelter, clothing, entertainment, everything!
Starting a food garden is the first step toward self reliance.
@Ni-dk7ni complete "self sufficiency" is never possible. Self reliance is the disposition of looking to one's own abilities and resources before getting outside help.
Some of the shots interspersed with Gaz's words were so moving ❤ Such wonderful filmmaking showcasing the beauty of vegetable growing and nature. Motivating and inspiring in the most gentle of ways.

Gaz is so right about the taste of peas changing soon after they are picked. When I go to the garden for the purpose of picking sugar snap peas, there is a problem with so many of them not being able to make it to the kitchen. I just can't seem to quit sampling them as they are picked!

Hi, there is a restaurant on a farm in capetown (South Africa ) and one in Stellenbos (SA) that only cook what is grown on the farm.
So if you want to do something like that is awesome 👌. You can even teach ppl to cook. Have them ( small group) stay over and they can learn how to cook aswell as have a get away...so you get income from them staying over and cooking lesson . .....just a suggestion 😊.

I try to grow no matter where I live. I even had patio container gardens in an apartment. It helped with things I needed, tomatoes, jalapenos, strawberries and herbs. But made me feel good too. ❤
Gaz should look into Blue HIll Farm in New York. A beautiful farm house/restaurant focusing on what is in season and dedicated to soil.
I love how the chickens come running towards Gaz because they know he's got snacks for them. So cute! 😄
And because they know he's not going to eat them too 🤗

I would love to sit in your garden eating peas from the pod.
Never knew how good peas taste before growing my own and eating from the pods.
This was such a wonderful video. I love how he shows how his plans have changed over the years. Would totally visit the "restaurant" where someone just serves me raw vegetable on my plate I carry through the garden :-D. So much enthusiasm for freshly grown food!
Here's an idea: get a big garden space, and instead of a sit-down restaurant, have covered stations (or even stylish small greenhouses) around to serve "garden-side" courses. First course, fresh raw peas, salad course in another area where it's also raw veg and drizzle the fresh made dressing right there, when potatoes are ready, why couldn't guests help or watch you harvest, clean, slice them and onions on a mandoline then do a quick scalloped potatoes assembly right there in a garden station then pressure cook it in 15 minutes while they have a glass of wine and listen to a musician in the garden? It would be an experience!
I personally relate so well with your story Gaz. In 2020 I longed for a fixer upper with an area for a big garden in a small town. That’s exactly what got!
I’m also so passionate about growing. I envision in my minds eye the food forest that will be in a few more years. I love it so much. ❤️ Thank you for sharing your dream with us.

Gaz, your garden and the location look beautiful and your enthusiasm for growing your own food is inspiring. I have been growing my own vegies for a few years too and love my garden, especially all the flowers dotted through it.
Just one little note of warning (can't help myself) - I've become aware of oxalates in plants in the last few months which are toxic to humans. They are in some of our most favourite foods like beets, spinach, chard, almonds.. Too much of them is detrimental to human health and dairy products balance them out to some degree. So on a vegan diet especially it pays to be aware of them as their accumulation over time can lead to many serious health issues later on.

I used to follow Gaz's channel when he was a chef in London, very inspirational. He always had a ton of indoor plants in his flat then, so he was always a gardener in the making I think! I like it when you visit others' gardens, Huw, although you've posted vids of Gaz's place before. AND Spicy Moustache, another amazingly innovative gardener.
I love this…and gains a new channel to watch. He should look up The Lost Kitchen in Freedom, Maine, USA. She doesn’t grow all her own food, but sources everything local and serves small dinners in her restaurant.
Peas never make it to the table or even the house. It doesn't matter how many I grow I eat them on my little plot straight from the pod.
To me, eggs are a chicken's gift of thanks to me for feeding and sheltering them. Graciously and gratefully received!
Perhaps a cookery school instead of a restaurant.

A plant based diet is for everyone. I personally have nothing against eating meat as I enjoy plenty of it myself. However, when God created all of us, nuts, fruits, vegetables, and other plants is what He intended for us to eat.

29 Then God said, “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it.
