    YUM! We do a variation of this recipe without beans. I usually saute chicken, onions, and bell peppers for our version. Super easy and quick to throw together. Since I'm in a sticks and bricks with decent freezer space, I make things quicker and easier by cooking large batches of chicken and freezing them in meal-sized portions. I do the same with pinto beans (soak overnight, cook a few hours in a crockpot, bag up for future meals).

      Ohhh onions and bell peppers sounds so yummy! We’ll need to try that one time☺️ And I need to get back to more batch cooking and freezer meals…thanks for that reminder! I’m still in the minimal RV mindset😂 Cooking ahead and freezing is such a great way to save money and time!!

    Lot of carbs in that rice with almost no protein

      Hi! Thanks for taking time to join us today and share your feedback! I logged the meal as we made and served it into My Fitness Pal app to find the Macro count and wanted to share that information:
      Protein: 23 grams
      Carbohydrate: 61 grams
      Fat: 11 grams
      I hope this helps as you and others consider this trying out meal!

      @@FindYourCrazy it would be great if the carbs and protein were reversed
