Wow, I just did rib roast Friday. Seasoned it heavily with only kosher salt and black pepper. Put it in the fridge overnight and cooked it the next day. Sooooo awesome and delicious! I could have sworn I only saw two bones mine was a two bone also!
I've done rib roast a number of different ways. One thing I do is take the ribs off, and retie the roast, then season it heavily like you did. Another thing I do is use a pan to catch the drippings as the roast cooks. The gravy from those drippings is lit as the kids would say. My daughter loves the ribs, so she gets the ribs, and she's just as happy as could be.

Great looking prime rib! Did you mention the temp of the smoker? And did you use any pellets or just the heat from the smoker??
Went 250 degree and used a hardwood blend for pellets.

That’s a great way to add flavor and cook a little more for those that aren’t into rare or med rare.

It’s on high and probably 450° plus.
Is the beef powder a crushed beef stock cube as I haven't seen the powder in the UK
Looked like a knorr brand beef bullion powder to me.
It is like the cubes but in powder form.

I do one every year for the Last 10 years. Nothing like a prime rib off the smoker

The only thing that I do different, is that I put an aluminum pan under it to catch the drippings.
