@@NorthTexasBBQAddicts My bad. I guess there are different ways of smoking, I always think offset when somebody says smoker, just because that's what I have. I was hoping to find a way to make crispy skin on my offset, something I haven't been able to do yet, comes out all rubbery.
Mate well done I will smoke my bird tonight you gave me some good ideas, What I will do different I prepare the bird like you would do a peeking duck and use Chinese five spices for a rub or Morrocan.
This is where I get to eat humble pie, what works for a duck was a disaster for the chook. the skin was so dry the smoke did not penetrate Next time I will stick with the original recipe.

Any chance to say a couple of words about what spices I can use if I don't have premade mixes that you're using ?
salt, pepper, garlic and smoked paprika is a great combo. If you like lemon pepper I'd add that in also. Thanks for watchin!

Is the principal the same for cooking on a larger drum style BBQ? Load the heat at one end and slightly offset the chicken from the heat?
Yes no on the drums the heat is direct
