Have one quick question, did you happen to run into and chat with the sheriff of Sherwood Forest while you were in Nottinghamshire? Sorry, couldn't resist a little Robin Hood reference there as corny as it was , lol 😀🤣😂 My paternal grandparents were married 68 yrs before my grandmother passed in 1996. Before I was born, my parents had gone out to visit my grandparents,(they had 2/1/2 acres of land in Perris Ca an hr 1/2 out of L.A.) on their property they had animals, everything from geese, ducks, goats( which i partook in some bbq goat when i was a littler over 1 yr old and shared it with their dog Lady, after all , caring is sharing, but that's another story for another day 😀). When my parents (who were both t city raised ) went out frequently to visit and vice versa, when they would go out and visit. my mom would sit and a friendly cow would get pets from her while my grandfather showed my dad whatever damage the stray dogs did when they attacked his goats etc). As my parents were getting ready to come back home, my grandparents gave them a care package and in it were the steaks. So a few days later, my mom prepared the steaks, my dad asked her why she was eating her steak, my mom asked him where did the steaks come from, my dad said my grandfather had some cows slaughtered. My mom told him she couldn't eat her steak , he asked why and she told him that the steak might've been her friend the cow. My dad just rolled his eyes. That was over 40 years ago/ Just to be clear, my mom did eat steak, just not that particular one.
I remember when I was a boy we a wonderful proper butcher shop here in , Maryland called , Benson's - they're gone now , but I can still remember the amazing quality of their meats ❤ 🥩 ❤
Even in the US, I miss the butcher that my gran always went to. None of his kids wanted to take over, then he had a heart attack and he had to sell. It became an ice cream shop.

I enjoy so much learning from you Darren, for that I want to share my Victoria Cream. For one side you have to prepare a nougatine, with more almonds than caramel made with muscovado sugar organic light fine, and after to grind all very well. For other side boil in water until reduced, golden sultanas raisins, and when is cold to pass for sieve getting a puree consistency. By last, makes with creme fraiche whipped cream, adding first and second preparation with a touch of vanilla beans of Madagascar and a few drops of Black Raspberry liqueur Chambord. You really did get some amazing looking meat. Even I couldn't mess those cuts up. My favorite is Osso Buco made from an adult instead of veal so I get a richer meat and marrow. Bravo on being the favorite child but we know that's only if you're the only child! LOL
