I love the question near the end "ARE YOU STUPID?" yes the characters are clueless. I dunno which sonic game I was watching someone play but Eggman had had his villain reveal and just then one of the secondary characters just wanders through the scene carrying the Chaos Emerald out in front of them like they had a lovely plate of cookies and not a massively important piece of Villain Bait.
Because you probably only watch people who are bad at these games and refuse to look at the tutorial to understand the game mechanics. Sonic games can be fun, but many of them are hard to master. The learning curve tends to filter a lot of people out of the series.

I never played sonic growing up and I hate to say it but the game doesn’t seem like much fun. Nerissa’s streams are fantastic but the actual game seems painful to play with nonsense camera angles and attacks coming from offscreen or enemies placed perfectly for you to run into if you’re going fast in a game supposedly about going fast
Part of it too is that Nerissa straight up refused to watch the tutorial before streaming the game and got frustrated for not understanding how to play. It's a common mistake many newcomers and casuals make when playing Sonic games, and sadly they get put off by the series as a result. Sonic isn't as easy to pick up and play as other platforming series like Mario. Sonic games tend to focus on speed running and/or score attack, depending on the game. SA2 is a very arcade-style score attack game and is meant to be played over and over again until you can get the highest rank in each level, racking up bonus points for playing stylishly without dying, and you get penalized for dying by having your score drop back to 0 when you respawn. You're also encouraged to collect items in the levels that go towards leveling up your Chao in the Chao Garden, creating this game play loop of action and relaxation. It can be a pretty fun game when you get the hang of things, but there's a learning curve that most people don't seem to have the patience for.

Both Adventure games have large modding communities of their own and there are mods that bring several QoL improvements to both of them. Some of the jank comes from Sega releasing bad ports with low effort, which are often buggier and look visually worse than the original releases, so fans end up having to fix them with mods, because Sega is too cheap and lazy to properly port/remaster their old games. This includes recent releases such as Sonic Colors Ultimate and Sonic Origins too. Sadly, corporate streamers and VTubers, especially those that work for Japanese companies like Cover/Hololive, are not allowed to stream games with mods, unless done under very specific conditions. This is due to game modding being mostly illegal in Japan as of 2018, largely thanks to Nintendo lobbying the Japanese government to push for it. Sonic X Shadow Generations might be the first time they're putting any real effort into a remaster of an older Sonic game, but only time will tell if it will actually be good.
