I never saw fresh.pigtail being sold here in T and T but I suppose it will be the same as pork pelau. The colour was.beautiful...lovely garden👍👍

So i cook up a One pot, Pig tail and chicken Palau, in my Pressure Cooker in About 12 minutes @ my home here in Chicago, USA 🇺🇸, and its a little much more Ingredients than i use in Cooking A Trinidadian Roots Meal....👩🏾🦳❤🇺🇲✡🇹🇹🍻👍
Love piggy tail ( gremlin use to call it that ) but in my home got some seniors with BP issues but don't tell them piggy tail is a no no. So I've taken to putting tail into the pressure cooker to reduce salt and soften . They happy again. So piggy tail peleau still on my menu.

Ria do you keep the heat of your stove low or medium while browning the sugar. Please let me know. You have a beautiful garden.
Start medium and then reduce to low when it starts smoking--and get the meat ready to throw in the pot!

maria harthartmar No it’s not sweet. We are essentially making our own browsing with the sugar-cooking from scratch as they say. I am sure you could add browning instead but never personally used it in my stews. Thanks for your question.

I would have just made the rice & peas in a separate pot, & added the pumpkin, carrots, peppers, green onion, & seasonings to those stewed pigtails.
While I do like pelau, I like stew pigtail gravy with my rice & peas even more!! 😋😋😋
