My mom's side of the family is german and every year (except this year of course) my mom, aunt, and oma get together and make like 30 stollens. My mom solely made like 10 this year.
Just what 2020 needed! A nostalgic reminiscence back to a simpler time. When corona was something you drank and we all gathered 'round our electronic devises to tune into the latest installment of Baking With Layton.
Also yeasted Dough needs to be kneaded. So if it looks/feels like that it needs structure which comes from gluten, and gluten development is achieved through kneading. So more kneading and perhaps adding a bit of flour.

Every year in our house we have a tradition (not the most unique as far as traditions go but) in which we make mince pies. Can confirm kneading is a good time and whilst it was shortcrust pastry and not really a dough, fun times were had. Happy Christmas all. (sorry Dan, I did snicker at the Smeg line and I refuse to grow up)

I did the tiniest bit of almost baking this year as my family made gingerbread cookies, and as the dough stuck to absolutely everything (even though I had added SO MUCH FLOUR) I remembered why I enjoy just sitting and watching others attempt to bake... and occasionally eating the successful results. So thanks for this, hope you had a good Christmas!

Was going to bake something for Christmas but I found out one of my coworkers tested positive for covid and now I have to quarantine at home (I don’t have the ingredients to bake) and pretty much ruined my Christmas even more than it is. This video made me feel better about not being able to do what I planned to do. I hope everything will be okay and I can bake something when I can!! Thank you :)

So thank you for your video's and your book, both of which made 2020 alot more bearable. Be kind to yourself 💜
YES! all my bakes have failed this year cos my heart hasn't been in it! I tried gingerbread and put wayyy too much spices and salt in and they had an awful after taste. I also tried trifle and put way too much milk in the custard so it turned into liquid. I think I was overcompensating with some of the ingredients to try and force xmas spirit into them. I tried both again afterwards and got them both right so I guess it kind of is a good omen for 2021. 2020 was awful but hopefully our resilience to keep trying will bring us a good year! (touch wood). Love you Dan, merry xmas xx
I'm right there with you, Dan. My Christmas Eve went as follows: A massive speaker fell on my foot and broke my toe. Waited 3 hours in the emergency room lobby with a stranger who later got diagnosed with covid. Drove myself home in excruciating pain and have to wait til the 26th for the pain meds. Now I'm off my foot for a month and self-isolating just in case. But when I got home I washed the fuck out of my hands, made a sandwich, then hobbled along like Hazel to my couch and chilled with my bunny while watching your triumphant return. Thank you and Merry Christmas.
