    Starry, As I've stated before I'm not of grid, but I do a lot of the same stuff you do, well..... I watched a video of yours and you'd stated " don't put all your egg's in 1 basket" and it really got me to thinking, so now I'm canning 1/2 or more of everything, as I live high a top of a mountain and we loose power a lot and it's been off as high as a week in the winter, the power company can't get up here due to Ice, snow etc. I was so thrilled when I seen this video on how to can butter, and I've been telling all my neighbor's and family, of course they act like I've lost my mind, and they've said " you can't can butter, fats and give me a long list of other things they say you can't can, But Thank You for showing me new ways of doing thing's, and for teaching me new ways of thinking !     Mrs Starry, I want to thank you so so so much for all your valuable information. I've been watching your videos for a few weeks now and I bought a canner but I've been terrified to use it (even though rare, I've heard of canners exploding). Getting your videos in my head and getting comfortable with the process before starting to can helped me get through my first real canning session. I was able to do butter (using this process), pressure canned corn, and did a water bath for blueberries. Thank you for being such an inspiration!

      It took me a year to use my pressure canner. I understand how you feel lol. I love her method of canning butter! Was just looking on Amazon for powdered butter and holy cow the price is crazy! I cannot wait to learn from Mrs. Starry!

    Great Video and channel thanks for taking the time to do this. One thing that goes with this is lard. I have been making lard and canning it for years and it works really well. Where I live I can go to the grocery store and ask the meat dept for beef fat and they will give it to me free in boxes that make about 6 quarts of lard. The only time it gets a little difficult to find is during hunting season because people come in and get it to make sausage.

    I am so super excited to see this video and give it a whirl. We are Bible Translators in the South Pacific and I have wanted to find a way to get some butter out to where we are living in the village without TOO much effort. WOW . This is the answer. Thrilled!     You make everything so simple...which I love! I am not able to can here in Kuwait as of yet...something to look into. I am however learning all this so when I return to Tennessee I can do these. I so appreciate your videos and can't wait until you are better to make new ones. I appreciate the old ones though since i haven't watched all of them yet. Thanks again for so much fun and information you put into your videos! (I also enjoy your husbands antics....mine has the same personality..I love it!)

    I am soooo happy to see this video on canning butter! Everything I have seen said you MUST pressure can it! I have a pressure canner, but I have a glass topped stove (which I hate). And I've read lots of cautions about pressure canning on one. Thank you so much for posting this, Starry. And I'm so glad you are on the mend. We've been praying for you!

      I also have a glass top stove and can on it all the time. Lots of people do... (I also can't stand it) I'm hoping it breaks into pieces so my hubby will buy me a new one. HaHa!!!

      ​@@kellyh4052I Glass Top also. I bought a Camp Chef 3 burner grill to be able to can more easily outside.
      I also found a 1930's Wood Cook Stove, (still hooked up & being used) That gives me more Options.
      Would love to have a outside kitchen. But alas, I will be waiting awhile. Still waiting on the Greenhouse, DH, promised me 4 yrs ago😂😂
      He will eventually get to it. We talked about remodeling our kitchen(6 yrs ago) He brought it up the other night ...we will see😂😂

      @@countrycritterfarm1376 You know what's funny, this post is 7 years old. We moved and what do you think I got? A glass top stove! It came with the house. 😧 I did however get a green house because it came with the house. I also got two freeze dryers after a bunch of fast talking. 😝 I would love to have your 1930's stove. I'm dreaming of the outside kitchen, he thinks a bbq grill is an outside kitchen. lol I'm so glad you popped in and reminded me of things I still want. You're probably my long lost sister. :)

    I'm not sure if you know this, but clarified butter will keep almost forever. In butter, it's the milk solids that go rancid, so if you clarify your butter, it'll keep. Just melt butter, pour the yellow fat into a container and set aside. It will be harder than normal butter if refrigerated.

      @@collettemcgahen8512 After you melt your butter, skim off the milk solids on top. There's probably a video on it.

      @@lifebeginswithaseed It's called Ghee. It tastes great and from what I hear does not need refrigeration. I use the crock pot, melt it and keep straining out the fat as it floats on top.

    I just love your video's ! I have canned butter for some time now . I can the same way you do but I pressure can mine . Looks like both methods work well . I just opened some butter I canned 3 1/2 yrs ago and it was perfect! It works great in making cookie dough or other baked goods too . I tried Ghee first and it is good for cooking in a skillet as it doesn't burn like butter does . Canning whole butter is my favorite though . Great to have on hand during bad weather . Never know what will happen so I buy when it is on sale and can everything . Never hurts to be prepared .

      So many different 'yes-s and no-s" on the internet about canning butter. How long do you pressure can yours? i LIKE that you had some 3 1/2 years old still good.

      Nancy, My butter and Ghee will be 4 yrs old Sept.2016. I live at an alt. of ten thousand ft. so I use 15# pressure for 75 min.. Go to Katzcradul UA-cam for pressure canning butter . This is where I started . I have not tried the non pressure way of canning butter so can't say how long it will last that way . I may try it just to see . Hope this helps .

      Nancy , I failed to mention that when I can butter I use half salted and half unsalted or it will get a gritty texture . I guess you could used all unsalted if you like and salt it later . Hope you try canning butter no matter what method you use . It is great to have in the pantry .

      Thanks. I found the Christian Homekeeper that said to can for 60 minutes in the pressure-canner, so that is what I did today. But actually it canned at pressure for 80 minutes, because I got involved with another project. I'm still shaking them. Will check out your blog.

    Just found your ''easy can butter, no water bath, no pressure cooker." Going to try it this week. Today everything is Gov control canning ways.. I am 79 yrs old, my grand mom/mom use to can without these gov restrictions. I as well for many yrs..stopped. They nor I have never had pressure cookers, so they canned lots of green beans and other no acid foods in the water bath, and guest what, had them for couple of yrs and no one got sick nor died from their canning. Thank you for this butter recipe..

    Just a thought, I live in Long Island NY, and butter here is about $5 per pound ( not sure how much it is elswhere). We have a membership to a restaurant supply store, the membership is free. We buy 1 lb blocks of butter for about $1.75, those would be perfect for canning! Just an idea for those of you paying high butter prices like we are. To get the membership, you just have to prove that you own a business, that's it. Hope this helps. Blessings!

    I have thought of doing this but haven't so far, and I really need to! I can a lot but for some reason, butter is one thing that hasn't made it into my canning pantry. Thanks for showing this and reminding me to get busy with it. I think what we need to do is for every "use" pound we buy, we need to buy at least one if not two "storage" pounds to put up for long term.

I have been canning lots..and this butter recipe is a gem. some people have asked about it being unsafe and the butter going bad I had these jars in my pantry for over three years and all stayed sealed and were perfect. However I tell people if they feel uncomfortable go and water bath them. I wouldn't waste the time but it is a personal thing. Again welcome and please enjoy!!

    No one mentioned that once heated and melted, butter will change taste. It's a matter of your taste preferences but I always use unsalted, European style butter for canning and for daily use. It tastes so much better.

    I'm back, 7 months later. Yes I made your butter. Wow! So easy. I made it 6 months ago, then a couple weeks ago, I had to use 1 jar. All my store bought box butter was froze in the freezer. We needed soft butter to spread on toast. None in the fridge. So I thought, ok Marie, go in the basement and get a pint jar of butter out. I did. It was delicious. I usually always keep my butter in the butter dish on the table. Ready and soft when need it. It would keep in the butter dish about 2 weeks no refrigeration and no mold. So thought I could keep the jar of can butter that long our of the fridge. To my surprise, No you cannot keep this on your counter more then a few days. I left mine out for nearly 2 weeks on the counter, then yesterday, I went to use it. When I open the jar, it had a couple of black spots on it. Humm! thinking what did my husband have on his knife to leave food in the butter. So remove it and discarded it. Went back in the 3/4 empty jar with butter left. Took my spoon to scrape out some butter to use, eek! Black in it. It was mold. So what ever you do, do not leave it out at room temp for more then a few days.. in fact, I will not leave the next jar at room temp for more then a day or 2. The butter was so good. Cannot wait until I do another batch. So so easy is your recipe. Thank you so much.

    Thank you for your channel. I found a way to use your lessons to make living in a expensive world better. I found I don't need a big fridge anymore, and I have started cutting down bills by a few hundred dollars. Next is off grid.

      jo niftythriftynotquitefifty Oh I have done that...plan on buying a case and the next day its not on sale!! ughhhh I hope you get that price...have f un doing the butter...remember..its summer now so you will need to put them probably in the fridge to cool. Then go in every five min to begin with and shaky them or turn them upside down. Unfortunately canning butter in the summer is a little wee bit harder because you have to have a real cool spot...and often the fridge is it! But dont despair..just make room in the fridge and keep shaking it....takes time to set up but it will!! Good luck!!

    I'm new too canning My grandma & aunt canned when I was young..How do you know when to bathe your jars heat your jars or pressure cook your jars?? This is all new to me and I'm trying to soak up as much knowledge as possible to can food for me and my husband..We both have health issues and I've gotten away from buying a lot of canned food from stores..We miss our peas, etc. I want to bring them back in the house again🤗..Thx hun for any and all information ahead of time..take care Shey

      Anytime you're using jars and processing in pressure or water for less than 10 minutes you want to pre-sterilize your jars. Here she puts them in the oven at 250 but I don't know for how long. I've never done that. I'm sure one of her other canning videos mentions it. I believe she has a lot of "beginner" videos that will help you get started. Canning meat and butter was new to me which is weird because it's done commercially so I don't know why it never struck me to do it myself. This holiday season when butter goes on sale I will be stocking up and putting into jars. The freezer has been my previous method but I'm trying to get as much off of electric as I can.       Thank you so much!! I'm wanting canned goods in the house again!! I like canned spinach and peas Blackeye peas etc. We are only eating out of cans tomatoes 🍅..I want to stock up this way now!! I have a total with my big upright freezer 3 of them stuffed with fruits meats, vegetables etc. I would love to fill my cabinets back up since we changed our diets due to hubby's and my health him needing so much less salt and me less sugar! I watch everything we eat these days!! I've got to learn from scratch on this canning and sterilizing! I've got a lot to learn as my Grandmother and family always made us stay out of kitchen back then scaring us to death of the canner lol!! I feel they are safer now and want to try!! Thx for your help I so appreciate it!! Do you do videos on this? How do you sterilize your jars? I have sterilize on my dishwasher..Also I have a stock pot can you use it with a little water and just bring them to a boil?? Appreciate any and all help thx Shey

    I've been canning for years and have seen people canning up butter and I'm a bit confused why people can can butter this way. What makes butter (pH 6.1 - 6.4) safe to can in this way while other low acid foods (meat 5.8ish are not)? My confusion is that the pH of butter is higher than most meats and we know all meats must be pressure canned to be safe for shelf storage.

      NCPC says it is not safe even when pressure canned. I am going to err on the side of safty and refrig. mine.

      My butter lasted 9 months on the shelf. Butter doesnt need to be refrigerated anyway. It keeps great on the counter.

      I think it should be pressure canned but ghee is pretty much indefinite if cooked correctly

      My mother water canned only. Meats, salmon, beans and more. It can be done safely without pressure canning.

When i do my bake goods and it calls for soft butter i dont have to wait to soften the butter anymore..its all ready to go!! Glad your gonna try it:)

    Some people say butter should be pressure canned. I don't know, I'm new to canning. What are your views on this? They also say butter is gritty when pressure canned. Your technique sounds a lot easier.

      I think everyone needs to do what THEY feel most comfortable with. BUT I will say I have only done this method and the results speak for themselves. Butter on the s shelf GOOD for over 3 years. AND I have read on other homestead blogs 5 plus years. AND the butter is not grainy which pressure canning will do! Remember my jars are sterilized, my lids are too and everything is HOT..hot like the temperatures when your pressure can. Thanks for asking dear! I appreciate your interest.

      Starry Hilder I melted my unsalted butter and pressure canned it. I was not happy with the results! I ended up with brown grains at the top of the jar and a tan-colored mud at the bottom. I will definitely use your method next time. Thanks for the info!

      Yes thats one of the reasons why I dont use the pressure can method..butter can be finicky...this method is tried and true and I have had my canned butter for 5 years in my pantry all of it good!

    Great idea.. I might have to try this. Being in Texas I have to refrigerate it no matter what time of year it is, but if it can be stored on my shelves til I open them then Great! Good ideas from you so ..thanks.

      texjames2000 Your welcome! Yes if you live where it is hot that shelf life will be short unless you have a cool dark pantry. But it will save space from storing in the freezer!!

    Is this the same for real butter from grass fed grass finished cows? I know zero about canning anything, I hope you'll do more instructional videos, I want to learn how to do all this and jams etc...I learn better this way....this is awesome!

    Hi Starry. We have watched your videos and method of canning butter along with many others. The issue we are having that no one has asked or that we can see has mentioned is about what happens if your butter will not set-up properly? Has this ever happened to you? For some reason most of our jars of canned butter will not solidify properly even after putting them in the frig. They initially do when first removed from the frig but after a short while start to liquify again. Whaaaaaaa. What gives? Any ideas or words of wisdom? Thank you so much.

      Depends on how long it will sit, butter can live outside a refrigerator for a week or two. Canning only preserves a thing as long as it is sealed, once the seal is broken it has the same shelf life as if it was fresh.... ish. I would refrigerate a jar that size and only leave out a small amount in a dish that could be used in a day or two to keep it soft.

    I live in Nevada do I have to worry about my butter going bad if the house gets hot causing the canned butter to melt iin the jars? My coconut oil melts iin the summer, but does not go bad. Please help. How !long for jars in the oven? Thank you

      @Tami Marie Scott. Use butter bell or farmhouse stone jar with glaze on inner walls. Fill-up the jar half with butter and add cold water on top. Change water couple times a day, which you will do each time you use butter. Butter will be spreadable, but never liquid, like it happens on hot days if kept on a butter dish.

    Starry, have you ever canned nut butters? I love almond and peanut butter, and would like to start making it myself since it's so incredibly expensive at the store ($14.00+ per jar for one brand)...YIKES! I would assume that one could can nut butter in a similar fashion as you did the butter in this video. However, I can't find anything online with canning directions for nut butters. I know you have said in the past that you've been canning for a long, long time, so I thought if anyone has done it, it would be you. Thank you for any information you have on this topic, and thank you for sharing your off grid homesteading journey. It's so fun to watch you and Mr. Hilder!

      i have not simply because you an grind it fresh...i use my junior hand mill and my electric wonder mill. You keep the nuts on hand in bulk..so i just dont go that extra step to can the butter...for me its easier the fresh way

    Question: Why don't you use the re-usable canning lids made by Tattler? Have you had any experience with them, just wondering what your opinion is on them. I know they are expensive initially (about $20.00 for 3 dozen) but to be able to use them for years seems to work out to just pennies. Thanks, loved this video.

    I need to double check a few things with you,..
    1 - Melt better, no need to simmer or boil, correct?
    2 - sterilize jars, lids, etc., make hot and pour in hot butter.
    3 - Shake after filling, shake when you hear pings, then put in fridge or outside..?
    4 - Shake every 20 mins or so while in fridge/outside, till 1 hour is up and then I should have solid, even, butter,....!!?!
    DID I GET THIS CORRECT? LOL! I do not want to ruin butter,.. it is gold!! ;-)

      +J TDMN 1) dont need to boil just get hot!
      2) yes always sterilize
      3)shake shake as you cool in your fridge or outside on a cold day...the jars will usually ping right away
      4)takes about a hour or so for solid butter..then its ready for the shelf long term
      Good luck!!
      And refrigerate AFTER you open!!

      John you could make the butter yourself very easy to do. But I have been buying butter on sale..which is now actually cheaper then taking the cream and making it.So I do what is the cheapest so I can live off grid and not have bills to pay!! haha

      +Tenaj I. (SojourningThruLife) Garage is f ine..but pay attention to the temp! Most pantry foods should be stored in a place that is COOL..dark...So if your garage heats up during the summer..probably not a good idea! A basement is good, even a hall closet in the house can be a small pantry...!!

    So you boil the lids, and heat the jars on 250° for 20 minutes, while softening the butter to liquid.
